Just stopping by to wish all of you a happy and safe New Years Eve. As you read this I am celebrating with family and friends in Arizona. Tomorrow we head to the Grand Canyon. I will be posting all about our trip when I get home.

Bacon Cheddar Corn Muffins

These corn muffins studded with bacon bits and cheese are quick and easy to make and the perfect portable breakfast or accompaniment to a warm bowl of soup.
ingredients:
1 c. corn meal
1 c. self rising flour
2 T. sugar
pinch of salt
1 c. buttermilk
1/4 c. canola oil
1 egg
1 (3oz) package bacon bits
1 c. shredded cheddar cheese
instructions:
Combine the cornmeal, flour, sugar and salt in a large bowl. Make a well in the center of the dry ingredients.
Whisk together the buttermilk, oil and egg. Pour into the well of the dry ingredients and stir just until combined.
Stir in the bacon bits and cheese. Using a regular muffin scoop, spoon into a 12 cup muffin tin that has been treated with baking spray.
Bake in a preheated 450* oven for 15 minutes, until baked to a golden brown and a skewer inserted into the middle of the muffins removes cleanly.
