I love joining Nichole of Cookaholic Wife each month for the Improv Cooking Challenge. She assigns 2 ingredients each month and the bloggers who choose to join in the fun create any dish they would like as long as it contains the 2 ingredients. This months ingredients were Nuts and Honey.
As Nichole's graphic says, the possibilities are endless. I usually obsess for a few days over what I should make and change my mind numerous times. This month was a little easier because my friend, Ellen of Family Around the Table asked the Festive Foodie Group to join her in a Halloween Celebration.
The possibilities were still endless but at least I had a theme. I always have almonds in my pantry and I had a little honey left from an early Summer visit to the Farmer's Market. When I was grabbing the almonds I spied a container of Pepitas. Pumpkin Seeds....perfect for a Halloween theme. I grabbed a box of cinnamon cereal while I was in the pantry. Cinnamon always reminds me of Fall and Fall reminds me of Halloween. I had picked up some Candy Corn Autumn Mix when I was last at the grocers so I pulled that out as well.
I tossed the nuts, seeds and cereal with some honey and butter and put it in a low oven to bake.
When it was brown and toasty and smelled amazing in my house, I removed it from the oven, gave it a stir and let it cool on the baking pan. Once it was cooled I tossed it with the Autumn candy mix and it was ready to go.
We snacked on some in the afternoon while playing a board game. Then after dinner, Marissa retrieved the bowl off of the counter and began munching again. Suddenly, she grabbed her phone and said "I need a picture of this so I can remind you to make more when it's gone". That, is music to a Mom and a Cook's ears.

Halloween Crunch
prep time: 10 minscook time: 30 minstotal time: 40 mins
Cinnamon cereal, pumpkin seeds, and almonds coated in honey and baked to a crunch goodness then tossed with some candy corn makes for the perfect Autumn snack.
ingredients:
2 c. cinnamon flavored cereal squares
1 c. raw almonds
1/2 c. pepitas (shelled pumpkin seeds)
2 T. butter, melted
3 T. honey
1 c. Candy Corn Autumn Mixture
instructions:
Combine the butter and honey. Place the cereal, almonds and pepitas into a large bowl. Pour the honey mixture over all and toss to coat.
Place mixture in a single layer on a baking sheet that has been lined with parchment paper or a silicone mat. Place in a preheated 300* oven for 20-30 minutes, until golden brown and fragrant.
Remove from oven, stir and let cool completely on the baking sheet. Place into a large bowl, add the candy and toss to combine.
