Bagels and Lox on the Casual Side #FoodieExtravanganza

We are sharing Everything Bagels today at Foodie Extravaganza......

Sue of Palatable Pastime invited us to join her in celebrating bagels saying "These can be recipes to make bagels, bagel toppers, bagel schmears, bagel sandwiches- anything that gets the bagel onto the plate".

I first shared this recipe a couple of years ago and it has been a go to appetizer ever since.  Let's take a look at what the others are sharing today.......

This is a quick easy appetizer.  The ingredients have long shelf lives so they are easy to keep on hand.  It only takes a minute to throw it together.  Those friends that just happened to be in the neighborhood and decided to stop by for some Holiday Cheer?  They are going to be very impressed.

I found this recipe in Mark Bittman's Kitchen Matrix.  Bittman has a matrix of different ingredients from which you are able to create a plethora of appetizers in a moments notice.  Such was the case with this appetizer that I'm sharing with you today.

Frank was teaching a CPL class. When he does so, I provide a continental breakfast, a mid morning snack and lunch to the students.  I started them out with a fresh fruit tray.

I also had these Applesauce Muffins, juice and coffee.  This keeps them satisfied for a couple of hours but it's hard to sit in the classroom portion of the instruction so around 10 am I like to put out a snack and some soft drinks.

I pulled out some bagel chips, cream cheese, smoked salmon and capers.  In about 5 minutes I had this snack placed on the table in front of them.  One of the students said he was going to pay to come back again just for the appetizer.  I think that's pretty high praise for something that took so little time and effort.

Casual Bagels and Lox

Crisp Bagel Chips, spread with softened Cream Cheese, topped with Cajun Style Smoked Salmon and sprinkled with capers.

ingredients:

1 pkg. Bagel Chips
1 (3 oz) pkg. cream cheese, softened
4 oz. smoked salmon ( I used cajun flavored)
1 jar capers

instructions

Spread the bagel chips with creamed cheese, top with flakes of smoked salmon and sprinkle with capers.

  1. Perfect snack! I always have smoked salmon and capers in the house. I usually use crackers but the bagel chips are very clever!

  9. I've never heard of Cajun flavor smoked salmon but if that means it's spicy, we would love it!

    1. I get it from a local restaurant that smokes their own salmon. They have tons of flavors and I have tons of fun trying them all.
