Sometimes the simplest ingredients can be very challenging. Not because you can't figure out what to make but because there is so much from which to choose. Tomatoes and Cheese are a wonderful combination and we eat these items together several times a week.
Pasta, Grilled Cheese and Tomato Soup, Baked Tomatoes, Salads, Casseroles, Appetizers and then the king of it all......Pizza!!!
I immediately thought of Pizza when faced with this challenge. The second thing I thought of was a Caprese Salad. I was originally going to make a Caprese Pizza but earlier this week we had one of those nights when we all were running in different directions.
Marissa had a short window between coming home from school and heading out the door. Frank's had to leave for a meeting before she would get back so dinner was going to be held off until around 7 pm. That is late for us. Knowing she would not last that long, I pulled out some tomatoes, mozzarella, pesto and bread. She was chowing down within 10 minutes of walking in the door.
French Bread Pizza is a go to in this house. I normally have ingredients on hand to throw a version together on short notice. I have found that it is a great snack to set out for teenagers who are hanging out in the pool or hot tub.

Caprese French Bread Pizza
Soft, chewy French Bread slathered with pesto and topped with fresh Mozzarella and sliced tomatoes makes a perfect quick weeknight meal.
prep time: 5 minscook time: 5 minstotal time: 10 mins
ingredients:
1 loaf French Bread, sliced in half lengthwise
1/2 c. prepared pesto, here is my homemade version
8 oz. fresh mozzarella, sliced
2 tomatoes, thinly sliced
instructions
Spread each half of bread with 1/4 c. pesto (or more to taste). Add a layer of sliced Mozzarella over the pesto and then a layer of tomatoes. Place under the broiler until hot and bubbly.

I see we both thought of an open face sandwich! So easy and delicious and everyone loves them. Especially pizza flavors! And my teenage days are long gone but I would appreciate this caprese version any day of the week!
