Apple Bundt with Caramel Glaze #BundtBakers


This moist, flavorful cake with a wonderful caramel glaze is the perfect seasonal dessert for this time of year.

When I was a child we had a fruit orchard consisting of Apple, Pear, Peach and Plum trees.  This year I planted these same trees in the yard of our current (and hopefully final) home.  I also added a cherry tree to the mix.

I have very fond memories of this yard and of helping my Mom make pies and cakes from the apples.  Each year for my birthday, which falls in August, my Mom would make me an Apple Cake.  I loved this cake and whenever I have apple cake it brings back warm memories of my childhood and my Mom.



I guess this is obvious to my friend Stacy of Food Lust People Love who leads the Bundt Baker Group.  Each month the members take turn choosing a theme for a bundt cake and invite the other's to join them.  This is the third August that she has allowed me to host and claim "Apples" as the theme.  Thanks Stacy.


This year I decided to make an Apple Bundt with a Caramel Glaze. Kind of a take on Caramel Apples, which I also adore.  The two previous years I made an Apple Almond Bundt and an Apple Cider Bundt, both of which were amazing.  


I said a quick prayer that this one would turn out as well as the last two and my prayers were answered.  I daresay that this is my favorite apple bundt to date.


I took this bundt over to our neighbor's when they hosted a pool party at their house.  It was a huge hit.  This cake is perfect for potlucks because it can be made the day before and remains moist and fresh to be served up the following day when properly covered.



I'm anxious to share this recipe with you but first let's take a look at what the others are sharing today.

Apple Bundt with Caramel Glaze

This moist, flavorful cake with a wonderful caramel glaze is the perfect seasonal dessert for this time of year.

ingredients:

1 c. canola oil
1/2 c. olive oil
1 1/2 c. sugar
1/2 c.  packed brown sugar
3 eggs
3 c. flour
2 t. cinnamon
1 t. baking soda
pinch of salt
1/2 t. nutmeg
2 lg. apples, peeled, cored and diced (I used Pink Lady Apples)
1/3 c. heavy cream
1/4 c. butter
1/2 c. packed brown sugar
dash of salt
1 c. powdered sugar, sifted

instructions

In large bowl of stand mixer, fitted with paddle attachment, combine the oils, sugar, 1/2 cup brown sugar, and eggs until well blended.

Combine flour, cinnamon, baking soda, salt and nutmeg.  Gradually add to creamed mixture until well blended.  Stir in the apples and scrape into a bundt pan that has been treated with baking spray.  The batter will be stiff to allow for the juices from the apples.

Bake in a preheated 325* oven for 75-90 minutes, covering lightly with foil if the top is browning too much.  Cake is ready when a skewer inserted removes cleanly.  Remove to a wire rack and allow to cool for 15 minutes in pan.  Turn onto wire rack, remove pan and cool completely.

While cake is baking, melt the butter in a small saucepan over medium low heat.  Add the remaining 1/2 cup of brown sugar and a dash of salt.  Cook and stir until the sugar dissolves.  Transfer to a small bowl and cool to room temperature.

While cake is cooling, Whisk the powdered sugar into the caramel mixture until smooth.  When cake is completely cool, drizzle with the caramel glaze and serve.

  3. I wish I could take just one piece of that great bundt. Thank you very much for the hosting and for sharing your childhood memories. Some day I will have an orchard too or something similar to grow my own fruit!! It must be very rewarding. XOXO

    1. Well I won't have fruit for a couple of more years but it is a start. I really miss the trees I planted at our last house.

  5. Your story reminded me on apricot and sour cherry tree in our yard. My mom didn't allow me to work with her in kitchen, so I just have memories on her cakes, without me helping her. Your passion for apple cake is so contagious, I'll buy some apples tomorrow for the cake, for sure. I live in a town and I am a single mom, so the orchard is like the dream for me. A few days ago I made a cake which is similar to your birthday cake, just with nectarines. It was very nice.

    1. Oh, I feel so badly about your Mom not allowing you in the kitchen to help. Being in the kitchen with family leaves such great memories. I hope you and your child(ren) enjoy time together in the kitchen.

  6. I think I could inhale that cake. We also grew up with an orchard of mixed fruit trees, and I've now got the tropical version. Sadly, no apple trees. Pineapple bundt?
