Pretzel Crusted Chicken Strips #FoodieExtravaganza


Tender strips of chicken breasts dredged in sourdough pretzel crumbs and fried to a crispy golden brown.  These amazing chicken strips are perfect for dinner served with traditional sides or as appetizers with honey mustard for dipping.

This month's Foodie Extravaganza is being hosted by my friend, Sneha of Sneha's Recipe.  She went over to The Nibble and discovered that we are celebrating National Fried Chicken Day on Friday.

Since today is our Nation's Birthday and we are all out picnicking you may have already made Fried Chicken to take with you to your potluck.  But if not, say perhaps you decided to throw burgers and dogs on the grill instead then we have some great recipes for you to cook up on Friday so you can celebrate this Food Holiday with us.

When Sneha first chose this theme I wasn't sure I would be participating.  First of all it is July 4th, and I have company coming over to celebrate.  Normally, it would be a relaxed, casual celebration but there is a little bit of stress for me today because our daughter, Jessica, is bringing her boyfriend's parents over to meet us. They are visiting from France for a couple of months.

Secondly, I have shared a lot of fried chicken recipes with you already like these fried little nuggets  in this Chinese Chicken Salad or these Coconut Chicken Strips.  I have also made these Cornflake Chicken Strips. my normal ole' Fried Chicken and Fried Chicken with a Kick.  I posted about Orange Chicken, Parmesan Chicken, and Tempura Chicken Nuggets.

I was afraid I didn't have any other fried chicken recipes to share.   Then I came across this recipe from Taste of Home.  When I saw it, I knew it would be the perfect dinner for when the Angel Face was spending the night.  Then I remembered about the Foodie Extravaganza Party and did a little happy dance.



I picked up my Little Miss Melody from school on a Tuesday afternoon and we stopped at the store on the way home.  I needed to pick up a bag of sourdough pretzel nuggets.  It was perfect as she was ready for an after school snack. We opened them up and she enjoyed a few in the car on the ride home.


We all played in the pool for a bit when we got home.  Then our Little Miss and Grampy continued to frolic and I went in to prepare dinner.  I cut up 2 chicken breasts into strips.


I gave the pretzels a whirl in the food processor until they were nothing but fine crumbs.  Then I set up my dredging station.  Flour in which to coat the chicken strips, followed by a bath in a seasoned egg and buttermilk mixture.  The final step is to coat them in those lovely pretzel crumbs before placing them into the hot oil to fry to a crispy, golden brown.


Taste of Home served these over mixed greens with a Dijon Mustard Dressing.  I served mine with French Fries, Carrot and Celery sticks and Milk.  Angel Face dunked hers in Ketchup, Frank dunked his in Ranch Dressing and I dunked mine in a Sweet and Hot Mustard.  They were delicious. And the meal was done in plenty of time for me to write this post, schedule it for this morning and free me up for my party today.  That is a win in my book.

Pretzel Crusted Chicken Strips

Tender strips of chicken breasts dredged in sourdough pretzel crumbs and fried to a crispy golden brown. These amazing chicken strips are perfect for dinner served with traditional sides or as appetizers with honey mustard for dipping.
prep time: 10 minscook time: 20 minstotal time: 30 mins

ingredients:

2 boneless, skinless chicken breast halves, cut into strips
2 c. sourdough pretzel nuggets
1/2 c. flour
2 eggs
1/4 c. buttermilk
2 cloves garlic, minced
pepper to taste
vegetable oil for frying

instructions

Place the pretzel nuggets in a food processor and pulse until fine crumbs remain.  Remove to a shallow bowl.  

Place flour in a shallow bowl.  Whisk together the eggs, buttermilk, garlic and pepper.  Place in a third shallow bowl.

Heat 2" of oil in a dutch oven or other deep pot over med high heat until shimmering.

Coat each chicken strip first in the flour, then in the buttermilk mixture and finally in the pretzels.  Fry the strips in batches until golden brown and crispy, 5-7 minutes, and no longer pink inside.  Place on a paper towel lined plate in a warm (200*) oven while cooking remaining batches.
