Blogger's CLUE Day is here again....

It is time for Blogger's CLUE Society.  CLUE is an acronym that stands for Cook. Learn, Undertake and Eat.  Each month we are assigned a theme and another blogger.  Our mission is to spy on the blogger that we are assigned and find a dish to make that fits in with our theme.

This month, in honor of Valentine's Day, Academy Awards, National Heart Health Day, National Cherry Day, etc....the theme is RED.  That is a wide open category there!!  I was very excited to be assigned Debra from Eliot's Eats.  Debra and I belong in a couple of other groups together including Food n Flix which is always a blast.  I know from seeing her posts in those other clubs that she is amazingly creative and a wonderful cook.  I couldn't wait to get into her blog and sneak around.

And let me tell you....I will be going back there as soon as I get home from my trip to the Caribbean.....yep, I hate to tell you this but while you are reading this post, I am probably underneath the sea swimming with the fishies or lying on the beach with a good book or sitting by the pool with a fruity drink in my hand.  OK....I don't really hate to tell you this but gloating is so unattractive, don't you think??

Alas....I digress...Now where was I???  Oh, yeah a recipe with the theme of RED in mind.  Debra had a couple of interesting Tomato Soups, some pizzas with red sauce, a wonderful red chile sauce using dried red chile peppers that I got really excited about and then remembered that I gave Ting my dried red peppers to take home with her.  Then I found a recipe for an Oregano/Tomato Compound Butter that Debra used for grilled corn.  Doesn't that sound yummy?  I tossed mine with some pasta that I served alongside chicken and it was wonderful!!  Debra also used hers on a BLT and I can only imagine how delicious that was!!

I did make one adaptation to Debra's recipe.  I didn't have any fresh oregano but I did have a tube of Gourmet Garden Fresh Italian Herbs so I used that instead.  And since the theme is Red and I was tossing mine with Pasta, I added a full tablespoon of tomato paste.



The compound butter took only seconds to whip up.
All the ingredients are those which are staples in my refrigerator.
I have a feeling I will be making this up quite often to have on hand.


You can wrap it up in plastic wrap and it will keep in the refrigerator for a good long while.


I tossed most of it with the hot pasta and added a dollop on top for presentation.
This melted in and the pasta was delicious.
I added salt to the pasta as I was tossing but you could add it to the butter as well.
I think some garlic added in would be tasty as well but I am a garlic addict.


Herb/Tomato Compound Butter
slightly adapted from eliot'seats.

3 T. Butter, softened
1 T. Tomato Paste (affiliate link)
1 t. fresh Lemon Juice
1 T. fresh Italian Herbs
1/2 t. fresh Ground Pepper

Mix all ingredients together.  Place on a sheet of plastic wrap and twist shut forming a small roll. Refrigerate until ready to use.  Print Recipe

  9. To say I was jealous right now would be an understatement! I love compound butter, and this one sounds amazing - what great color. I was to slice off a hunk and set it on a steak hot off the grill. Mmmmm....

  10. I have had plenty of compound butters when eating out but I have never made any - I really must make some of this. I think everyone in the house would love it!

  12. Lucky you to be in the Caribbean right now! We need the rain here in northern CA but I wouldn't mind being beachfront with a cocktail in my hand. :)

    I love the idea of using this compound butter in pasta. Just perfect!

  13. Debra has the most amazing recipes and this one is right up there with the best in my opinion! I have to admit I've never made compound butter, but what a handy thing to have on hand. So happy you are having such a wonderful trip... I'm eager for more pics!

  14. I love the idea of adding a flavorful compound butter to hot pasta for a quick meal! Pasta + butter = love! It's just so perfect for Valentine's Day :)

  15. Ooooooh ... tossing it with pasta! What a fantastic idea. The compound butter does look and sound amazing, but after slathering it on bagels, I couldn't think of what I'd do with it. Pasta is perfect though!

    1. The possibilities are endless. Melt some on grilled steak, use it on a sandwich, put a dollop on your scrambled eggs......
