Ham and Cheese Corncakes #BreadBakers

Grab this recipe and stick it aside for when you are looking to use up some of that Easter ham.  Chopped ham and cheese cooked into a corncake and topped with butter and syrup makes a wonderful, hearty breakfast or brunch.

Of course, you can make this delicious breakfast anytime you want.  You can use deli ham if you don't have leftover ham, but this is a meal I like to make when I am looking for a way to repurpose those holiday leftovers.

Ham and Cheese Corncakes

A hearty batter of cornmeal and flour, chock full of chopped ham and cheese, fried to a golden brown on a griddle and served up with fresh butter and hot maple syrup.  Life is Good!!

Ham and Cheese Corncakes

This recipe makes enough for 4 servings but is easily doubled.  Just place the pancakes into a low oven to stay warm while you cook up the rest.  With the ham and cheese included in the griddle cake this is a complete meal.  I like to serve up some fresh fruit as a side dish for them.

Ham and Cheese Corncakes

Ham and Cheese Corncakes

Chopped ham and cheese cooked into a corncake and topped with butter and syrup makes a wonderful, hearty breakfast or brunch.

Ingredients

  • 1/2 c. cornmeal
  • 1/2 c. flour
  • 1 T. sugar
  • 1/2 t. baking powder
  • 1/2 t. baking soda
  • pinch of salt
  • 1 c. buttermilk
  • 1 T. butter, melted and cooled
  • 2 eggs
  • 1 c. ham, finely chopped
  • 1/2 c. shredded cheese of choice, I used Colby Jack
  • extra butter and maple syrup for serving

Instructions

  1. Whisk together the cornmeal, flour, sugar, baking powder, baking soda and salt in a bowl.  Set aside.
  2. Whisk together the eggs, buttermilk, and butter.  Pour into the dry mixture and stir just until combined.  Fold in the ham and cheese.
  3. Heat a griddle until a drop of water sizzles and evaporates.  Pour a 1/2 cup of batter onto the griddle for each pancake and cook until the top is covered with bubbles and the edges are starting to dry. Flip and cook the other side for another minute or two. 
  4. Serve warm with butter and warmed maple syrup.

  2. I love the texture of a corn cake! It's something we don't get to enjoy very often unless I sub with millet due to sensitivities. Loved them while growing up!
