Slow Cooker Chicken Chili #ChiliCookOff

This chicken chili chock full of southwestern flavors is easy as can be.  Just place everything into your slow cooker and walk away.  When you are ready for dinner it takes only a moment to cut up the chicken and add the creamy cheesy surprise that makes this dish so amazing.

Chicken Chili

It is definitely Chili weather here in Michigan right now.  We have been having some beautiful Fall days that just scream for you to get out and take a walk in the woods.  This easy peasy and delicious chili is perfect for you to throw into the slowcooker before you leave.

I served this Chili up last weekend to the students in Frank's CPL class.  It was a huge hit.  I made it the day before his class and then just reheated it in the slow cooker during the morning.  Chili is one of those dishes that I always think tastes better on the second day, when the flavors have had plenty of time to meld together.

Slow Cooker Chicken Chili

Slow Cooker Chicken Chili

This chicken chili chock full of southwestern flavors is easy as can be. Just place everything into your slow cooker and walk away. When you are ready for dinner it takes only a moment to cut up the chicken and add the creamy cheesy surprise that makes this dish so amazing.

Ingredients

  • 3 lg. boneless, skinless chicken breast halves
  • 3 cans diced tomatoes with juices
  • 3 c. chicken broth
  • 1/2 lg. Vidalia onion, chopped
  • 1 lg. Anaheim pepper, seeded and chopped
  • 1 jalapeno pepper, seeded and chopped
  • 1 (15 oz) can of corn, drained
  • 2 (15 oz) cans of kidney beans, drained and rinsed
  • salt and pepper, to taste
  • 2 t. dried Italian Herbs
  • 2 t. chili powder
  • 1 t. cumin
  • 3 cloves garlic, minced
  • 1 (8 oz) pkg. cream cheese

Instructions

  1. Season the chicken with salt and pepper.  Place in the slow cooker along with the tomatoes, broth, onion, pepper, jalapeno, corn, beans, Italian hervs, chili powder, cumin and garlic.  Cover and cook on low for 8 hrs. 
  2. Remove the chicken and cut into bite size pieces.  Return to the slowcooker and stir in the cream cheese, a little at a time, until melted and the chili is creamy looking.
