250 years of Independence and the Weekly Menu

250 Anniversary

I remember 1976, when we were celebrating our country's 200th anniversary.  I was so excited and proud to be an American.  I was a young adult and had just had my second child, my son, Chuck.  His room was decorated in Red, White, and Blue.  Our country was recovering from the Watergate scandal, and we had great hopes for the future.

As I reflect on the last 50 years leading up to this anniversary, I have seen my country undergo many changes and advancements.  Some that I have celebrated and some with which I have disagreed.  This past year has been extremely difficult for me as I watch our current administration undo all the progress that has occurred and remove fundamental rights that had been guaranteed to We the People in our Constitution, with the VP now saying that Nixon's crimes were negligible.  I guess that might be true in light of the crimes this current administration is committing.

Of all the complaints that I have of this current President and his administration, I am angriest that they have taken away my pride in my country and heritage.  I was always so proud to be an American, and now I find it hard to celebrate this country that is so radically different from the ideals and dreams once promised.

That is my rant for today....I don't feel much like celebrating what should be a joyous and momentous occasion.  But we still need to eat, so here's the Weekly Menu.

Speaking of Independence.....Yesterday, we celebrated these ladies' 22nd birthdays.  They are strong, independent, and determined.  We had a great time celebrating all their victories.......
