Squash, Apple, and Cranberry Casserole

Squash, Apple, and Cranberry Casserole

All the wonderful fall flavors you love, baked up in one casserole for a delicious side to enjoy with your upcoming holiday meals.

Ingredients

  • 1 butternut squash, peeled, seeds removed, cut into 1/2" thick slices
  • 1 tart apple, peeled and cut into 1/2" thick slices
  • 1/3 c. fresh cranberries
  • 1/4 c. brown sugar
  • 2 T. butter
  • 1/2 T. flour
  • pinch of salt
  • sprinkle of nutmeg

Instructions

  1. Combine the flour, sugar, salt, and nutmeg in a small bowl. Set aside.
  2. Layer the squash and apples in an 8" square baking pan, treated with cooking spray, sprinkle the cranberries over and in between the slices.
  3. Sprinkle the flour mixture on top and dot with the butter.
  4. Bake in a preheated 350* oven for about an hour, until squash and apple are tender and the top is lightly browned.
