Here we are at the end of March already.  April is right around the corner.  April is a busy month around here.  Of course, there is Easter, preceded by the Triduum which means the choir is very busy with Holy Thursday, Good Friday and the Easter Vigil Masses.

We celebrate the day we were blessed with our daughter Marissa.  Her adoption was finalized on April 12th.

We also celebrate several birthdays this month.  Jessica's on the 24th, Chuck's on the 25th, and our German son, Max's on the 26th.  Of course, we won't be celebrating with Max until he joins us in Italy in the Fall.  Nor, as it turns out, will we be able to celebrate with Chuck as I had hoped.

We had planned to take the Angel Face, load her into our new Travel Trailer, and head southeast for a Historic Tour of Gettysburg and Williamsburg, with an opportunity to celebrate Chuck's birthday with him.  I got summoned for Juru-Duty the week we had planned on traveling.  The best laid plans........

Grilled Cheese and Avocado Sandwich

Grilled Cheese and Avocado Sandwich

Three types of cheese and creamy avocado stuffed between two thick slices of buttered bread and grilled to ooey, gooey perfection. Perfect for Breakfast, Brunch, Lunch or a light Dinner.

Ingredients

  • 2 slices sourdough bread
  • 3 slices cheese of choice, I used Provolone, Colby Jack, and Swiss
  • 1/2 an avocado, pitted
  • salt and pepper, to taste
  • butter

Instructions

  1. Butter both slices of bread on one side.
  2. Smash the Avocado and season with salt and pepper.
  3. Heat a skillet, preferably cast iron, over medium high heat.
  4. Lay one slice of bread butter side down into the skillet, add one slice of cheese on top, layer on the avocado and the remaining cheese. Top with the second slice of bread butter side up.
  5. Cook for a few minutes until the bottom is golden brown and toasted. Flip, place a plate weighted with a large can onto the top of the sandwich, and cook until the second side is golden brown and the cheese is melted.

  1. I don't think I have ever had avocado in grilled cheese. But I can imagine that that would be delicious!! Italy in the Fall?!?! I just found out we will be in Europe in August. I am SO excited. We haven't been since before the pandemic.

    1. They never, ever choose me because of my profession but I have to wait to be dismissed so we won't have time. Perhaps we can get in a short trip a little closer if they cut me in time.
