Ravioli Pasta Salad, The Weekly Menu and a Book Review

This easy pasta salad starts with prepared ravioli and is perfect for your picnic pot-lucks.  Dressed in a sweet Italian vinaigrette instead of a mayo-based dressing it can withstand some time outdoors in the heat.

I made this salad to take to the Fish Fry that John hosts each year on Kirsten's Birthday.  It is such a sweet way to remember her and celebrate the time we shared.

The Teacher

I just finished reading The Teacher by Freida McFadden.  This is the first novel of McFadden's that I have read.  It will be the last.  

This novel is a train wreck.  I was appalled by the tragedy and horror but couldn't pull my eyes away and kept on reading.  It did have that going for it...I stayed up way past my bedtime because I could not put it down.

This novel's timelines don't add up, the prologue and epilogue does not sync with the information in the story.  It has no redeeming qualities.  The characters are all horrible, and the subject matter is disturbing and tragic.  

As in every novel, there is food mentioned, most often pasta.  Pasta sauce cooking on the stove, dinner in an Italian restaurant, carry-out pasta, etc.  

So I decided to share a review for this awful book with a recipe for this wonderful pasta salad.

Yesterday was Marissa's Birthday.  We went out for dinner and are having a family celebration on Saturday.  This morning we are heading to the City of Warren, where they are having a small gathering for Amy.  It is her last day of employment with the city.  I can't believe that one of my children is now retired. I'm so happy for her.

On Tuesday we are invited to Bob and Cathy's for dinner, they are the proud parents of a new puppy and we are going over to meet him.  

On Thursday, Independence Day, we are heading out on a Road Trip to Seven Springs Resort in Pennsylvania.  We are taking the Angel Face and Frank's sister, Roz.  Frank's brother Dan and his wife Rebecca will join us for the weekend.  A large Polka Festival is being held there but the resort also offers hiking, rock climbing, multiple pools, bowling, miniature golf, etc....so I don't think we will run out of things to do.

Ravioli Pasta Salad

Ravioli Pasta Salad

This easy pasta salad starts with prepared ravioli and is perfect for your picnic pot-lucks. Dressed in a sweet Italian vinaigrette instead of a mayo-based dressing it can withstand some time outdoors in the heat.

Ingredients

  • 1 lb. pkg. refrigerated spinach/cheese ravioli
  • 1 English cucumber, diced
  • 2-3 tomatoes, diced
  • 1 bunch asparagus, woody stems removed, cut into 1-2" pieces
  • half jar of Sweet Italian Dressing (I used Marzetti)

Instructions

  1. Bring a large pot of water to a boil. Add the ravioli and asparagus pieces and cook until the ravioli float to the top, about 2-3 minutes. Pour into a colander and rinse immediately with cold water.
  2. Once ravioli and asparagus are cooled and drained, place into a large bowl with the tomatoes and cucumbers. Add the dressing, toss to coat, and refrigerate for at least 2 hours or until ready to serve.
