Banana Cream Pie is one of my husband's favorite desserts. His very favorite is this Strawberry Almond Torte that I make each year for his birthday. However, strawberries are not in season during the cold winter months here in Michigan but bananas are available year-round so this is a treat I try to make for him to brighten up those gray days we have during the winter months.
This pie does have to be refrigerated for at least 6 hrs. so allow yourself enough time to make it in the morning or the day before your dinner party.

Banana Cream Pie
Slices of perfectly ripe banana with homemade custard, covered in whipped cream and garnished with more banana slices in a flaky pie shell.

Ingredients
- 1 prebaked pie shell, cooled
- 4 egg yolks
- 1/4 c. cornstarch
- 2 c. light cream
- 1 1/2 c. heavy cream, divided
- 1/2 c. sugar
- pinch of salt
- 2 t. vanilla paste
- 2 T. butter, room temperature
- 4 perfectly ripe bananas
- juice of one lemon
- 2 T. powdered sugar
Instructions
- Whisk together the egg yolks and cornstarch in a small bowl. Set aside.
- Place the light cream, 1/2 cup of the heavy cream, sugar, and salt into a saucepan over medium heat. Whisk until sugar is dissolved and then whisk occasionally until the mixture starts bubbling around the edges. Remove 1/2 cup and pour into the egg yolks in a slow steady stream, whisking continuously.
- Pour the egg yolk mixture back into the saucepan, whisking continuously, until it comes to a full boil. Cook and stir for a full minute and then remove from heat.
- Off heat, stir in the vanilla and butter. Pour into a bowl, place plastic wrap directly onto the custard, and allow to cool for 15 minutes.
- Slice three of the bananas and place onto the bottom of the pie crust. Brush with some of the lemon juice to prevent browning. Pour the cooled custard over the top of the bananas and spread to the edges of the pie shell. Cover with plastic wrap directly onto the custard and refrigerate until ready to serve.
- When ready to serve, place the remaining cream and the powdered sugar into the bowl of a stand mixer fitted with the whisk attachment and whip until fluffy and medium peaks are formed.
- Spread onto the top of the pie, leaving space in the center if desired, to garnish with slices from the last banana that have been brushed with lemon juice, and serve or return to the refrigerator for up to an hour or two before serving.
