Caramelized Pineapple Tropical Loaf
Raspberry Clafoutis
Alsatian Bacon, Caramelized Onion and Gruyère Loaf

Caramelized Pineapple Tropical Cake

Ingredients
- 10 1/2 T. unsalted butter, divided
- 2 T. brown sugar
- 1 c. pineapple, peeled, cored and diced
- 1 T. dark rum
- zest of 2 limes, grated
- 1 c. powdered sugar + more for dusting, if desired
- 1 T. honey
- 1/4 c. sugar
- 3 eggs
- 2 T. 1/2 and 1/2
- 1 1/2 c. cake flour
- 2 t. baking powder
- pinch of salt
- 1 c. dried, flaked coconut
Instructions
- Place the coconut onto a sheet pan and place into a preheated 350* oven for 5 minutes, shaking the pan about halfway through cooking time. Remove from oven and set aside.
- Melt 2 Tablespoons of the butter in a large skillet over medium heat. Add the pineapple and brown sugar. Cook until sugar is melted and caramelized and the pineapple is browned a bit. Remove from heat, stir in the rum and zest. Set aside.
- In large bowl of stand mixer, fitted with the paddle attachment, cream together the butter and powdered sugar until fluffy. Stir in the honey and sugar. Add the eggs, one at a time, beating well after each. Mix in the cream, beating until mixture is smooth.
- With mixer on low, fold in the flour, baking soda and salt until incorporated.
- Stir in the reserved pineapple and coconut.
- Spread into an 8" square cake pan that has been treated with baking spray and place into the preheated 350* oven. Bake for 40-50 minutes, until a skewer inserted removes cleanly.
- Let cool completely and dust with additional powdered sugar, if desired.
