Strawberry Rhubarb Dump Cake, a Book Review, and the Weekly Menu

Thursday was Kirsten's birthday.  John had a Fish Fry and I brought this cake for dessert.  Tonight we are celebrating her birthday again with a weekend Mass.  We will be singing and then having dinner out afterwards.   I cannot tell you how much I miss having Kirsten by my side.

2 Women

Tomorrow we are celebrating the Teen's birthday.  This is the last year I will be able to refer to her as the Teen.  She is 19 years old on Tuesday and we have a lot to celebrate.

People with Judge

It has been 5 years since the adoption was finalized.  This journey has been a series of ups and downs but this past year has been mostly smooth sailing and we have so enjoyed watching this scared, angry Teen turn into a strong, kind, confident woman.  She has been a blessing and we are anxious to celebrate her .

Lonely Hearts Book Club

All these celebrations during this month with family and friends who become family was the perfect segue to the review of The Lonely Hearts Book Club that I began listening to on my walks before the California trip and finished on my drive back to the airport when those celebrations were complete.

This novel is about a group of people who outwardly seem to have nothing in common but as they form a book club and begin gathering to ease their loneliness they learn that they have much more in common than they first believed and form bonds that become strong and familial.

I know that there are many who believe that family is united through ancestry, DNA and "blood".  I am not in that camp.  I am surrounded by "family" that shares no commonality other than love and inclusion. I am very blessed to also have been raised by a family that had us call all of their friends "aunt and uncle" this meant that I lived in a neighborhood filled with family.  It wasn't until I was a preteen that I realized these aunts, uncles and cousins in my life were not blood relatives but rather family of the heart.

This is what the characters in this book learn while getting to know each other and themselves.  I enjoyed this story very much and recommend it if you are looking for a touching, fun story that follows the lives of a librarian, a curmudgeon, his nosy neighbor that loves to cook, his estranged grandson and the librarians co-worker and friend.  You will soon be wishing you could join this book club and become part of the "family".

The month finishes up a little quieter.  After our party tomorrow we have a quiet week taking us into July.  Here is what we are cooking up around here.

Strawberry and Rhubarb Dump Cake

Strawberry and Rhubarb Dump Cake

This easy dessert makes short work of those strawberries and rhubarb that are ready for the picking right now!!

Ingredients

  • 6 c. sliced strawberries
  • 2 c. sliced rhubarb
  • 1/3 c. sugar
  • 1 T. cornstarch
  • 1 box yellow cake mix
  • 1 stick + 2 T. butter, melted

Instructions

  1. Toss the strawberries and rhubarb with the sugar and cornstarchuntil coated.
  2. Pour into a 9x13" baking pan that has been treated with baking spray.
  3. Sprinkle the dry cake mix over the fruit and then drizzle the butter over the cake mix.
  4. Bake in a preheated 350* oven for 1 hour.
