I think eggs are one of nature's perfect foods. I always have hardboiled eggs in the refrigerator. They are the perfect grab and go snack. You can eat them as they are, slice them onto your salads or make a salad from them to slather onto a croissant.

Egg Bacon and Brie Bagel Sandwich
Start your day off with this delicious bagel sandwich stuffed with crisp bacon, a perfectly cooked egg and creamy, gooey brie cheese.
Prep time: 5 MinCook time: 10 MinTotal time: 15 Min
Ingredients
- 1 bagel
- butter
- 2 slices bacon
- 1 egg
- salt and pepper, to taste
- 1-2 slices brie cheese
Instructions
- Toast the bagel and butter both sides. Set aside.
- Cook the bacon in a non stick skillet over med high heat until browned and crisp. Place on a paper towel lined plate and set aside.
- Drain the drippings from the skillet but don't wipe it out. Return the skillet to the heat and add the cracked egg. Season with salt and pepper and use a spatula or butter knife to break the yolk. Cook until bottom is set and the top is starting to set. Flip and cook on other side until completely set.
- Place onto one half of the bagel and immediately lay the cheese on top of the egg, allowing the heat to melt the cheese.
- Top with the bacon and the other half of the bagel and serve.
