Bagel Sandwich

I think eggs are one of nature's perfect foods.  I always have hardboiled eggs in the refrigerator.  They are the perfect grab and go snack.  You can eat them as they are, slice them onto your salads or make a salad from them to slather onto a croissant.

Egg Bacon and Brie Bagel Sandwich

Egg Bacon and Brie Bagel Sandwich

Start your day off with this delicious bagel sandwich stuffed with crisp bacon, a perfectly cooked egg and creamy, gooey brie cheese.

Ingredients

  • 1 bagel
  • butter
  • 2 slices bacon
  • 1 egg
  • salt and pepper, to taste
  • 1-2 slices brie cheese

Instructions

  1. Toast the bagel and butter both sides. Set aside.
  2. Cook the bacon in a non stick skillet over med high heat until browned and crisp. Place on a paper towel lined plate and set aside.
  3. Drain the drippings from the skillet but don't wipe it out. Return the skillet to the heat and add the cracked egg. Season with salt and pepper and use a spatula or butter knife to break the yolk. Cook until bottom is set and the top is starting to set. Flip and cook on other side until completely set.
  4. Place onto one half of the bagel and immediately lay the cheese on top of the egg, allowing the heat to melt the cheese.
  5. Top with the bacon and the other half of the bagel and serve.
