These breakfast sandwiches come together quickly. I warmed the ham slices right on the griddle with the tortillas. A smear of salsa, a handful of cheese and breakfast in less than 15 minutes.
You can, of course, add some scrambled eggs if you would like. Or use bacon instead of ham. If you like spicy switch up some pepper jack for the cheese. Recipes are only a guideline to help you make a meal that YOU and YOUR family will love.

Breakfast Quesadilla
A quick and easy breakfast sandwich with a Mexican Flair. Ham and cheese flavored with salsa and melted onto a grilled quesadilla. You can just grab it and run out the door but I like sour cream with mine.

Ingredients
- 2 flour tortillas
- 1 slice deli ham
- 1/2 c. shredded cheese
- 1 T. salsa
- sour cream, if desired
Instructions
- Heat a large skillet or griddle over med high heat.
- Place one tortilla and the ham slice onto the griddle once hot.
- Spread the salsa onto the tortilla and sprinkle with the cheese.
- Place the ham slice on top and cover with the second tortilla.
- When the cheese has melted and the bottom tortilla has browned a bit, flip and cook second side until tortilla is browned in places.
- Transfer to a plate and serve with sour cream, if desired.
