I decided to have a Filipino Friendsgiving this year. We started out with Lumpia that didn't look great but were absolutely scrumptious. that recipe will be coming soon to a blog near you. We enjoyed them with cocktails while my pork was cooking in the Instant Pot and my rice was in the steamer. I braised some baby bok choy while we visited with our friends.
This was a wonderful and fun way to celebrate good friends and it is quick and easy enough to serve up for dinner during the busy weekdays.
Yield: 8 servings
Instant Pot Pork Adobo
Delicious, tender, flavorful pork adobo in less than an hour.
Prep time: 5 MinCook time: 35 MinTotal time: 40 Min
Ingredients
- 1T. canola oil
- 3.5 lbs pork stew meat
- 1/3 c soy sauce
- 1/3 c white vinegar
- 6 cloves garlic, minced
- 1 bay leaf
- pepper, to taste
- 1/3 c water
Instructions
- Press saute button on instant pot. Add oil to heat. When monitor shows hot, sear the pork, in batches, removing to a plate when browned.
- Return the browned pork, soy sauce, vinegar, garlic, bay leaf and pepper to the pot and allow it to come to a boil. Cook for 5 minutes.
- Press cancel. Stir the mixture and the aadd the water. Lock the lid, seal and cook on high pressre for 10 minutes.
- When monitor shows finished, press cancel and carefully quick release the pressure.
- When pressure is released, remove lid and press the saute function again. Bring to a boil and cook for another 10 minutes. Taste, adding salt and pepper if needed, before serving.
