Toffee Bars #ChristmasCookies

I had a Fall Feast dinner party for the neighbors and I slipped a cookie bar into decorative bags that I marked with their names and placed on the table as markers for the seating arrangement.  They were perfect and I still had plenty to go into the freezer to be brought out for Christmas.

Toffee Bars

Toffee Bars

Shortbread crust covered with semisweet chocolate and sprinkled with pecans. A delicious and easy addition to your Christmas Cookie selection this season.

Ingredients

  • 2 sticks butter, room temperature
  • 1 c. brown sugar
  • pinch of salt
  • 1 egg yolk
  • 1 1/2 t. vanilla
  • 2 c. flour
  • 1 (12 oz) pkg. chocolate chips
  • 1 1/4 c. coarsely chopped pecans

Instructions

  1. Beat the sugar, butter and salt in a large bowl until smooth. Add the egg yolk and vanilla, continue to beat until creamy.
  2. Turn the mixer on low and stir in the flour until well incorporated.
  3. Press dough into a 9x13" baking pan that has been lined with aluminum foil.
  4. Bake in a preheated 350* oven for about half an hour, until set with golden brown edges.
  5. Sprinkle the chocolate chips over the top of the bars and return to the oven for about 5 minutes. Remove and use a spatula to spread the melted chocolate chips over the top of the bars.
  6. Sprinkle with the nuts and cool in the pan. When cooled completely, use the foil to take the bars out of the pan to a cutting board. Using a sharp knife cut into small bars.
