I found the recipe for this dish on Ciao Italia. Agrodolce means bitter and sweet in Italian. The flavors come naturally from the combination of leeks and eggplant. It is a delicious dinner that is ready in the time it takes to cook the pasta.

Tonight a group of my girlfriends and I are going to Drag Queen Bingo, a dinner show at my sister's work. It should be a lot of fun. Tomorrow I have a Baby Shower to attend so Frank and the Teen are on their own for dinner all weekend.

Choir was canceled after Christmas due to the rise in COVID cases in our county but is resuming on Wednesday so I'm looking forward to seeing everyone. Thursday we are taking our 2nd daughter, Nicole and her husband, Pierre, out for dinner for her birthday. On Friday we are celebrating Lunar New Year with a family dinner. I am posting my Menu for that celebration and also the Weekly Menu. Happy Chinese New Year to you and yours.
