I know that this time of year stresses me out big time. I am so busy that I forget to breathe sometimes. My emotions run rampant as I reminisce of Christmases past and those who are no longer with us and look forward to spending time enjoying and appreciating those who are.
Not to mention all the cookies and desserts being baked and offered everytime you enter the home of a friend or walk past your kitchen counter. It is much easier to grab a cookie or 5 off the platter and call it dinner when you are stressed and busy. So I am thrilled that Rebekah chose this topic and can't wait to try some of the recipes the others are sharing.
I made up these healthified Sloppy Joes after seeing the recipe in an issue of Eating Well magazine. They add beans for the extra fiber and nutrition and they decrease the amount of ketchup used to cut down on added sugar.
No one will ever notice the nutritious changes that you made. These are still ultra comforting and even more satisfying and filling thanks to the addition of those beans.
Do yourself a favor and make up a pot of these sloppy joes. In 20 minutes time, less time than it takes to order and get carryout, you will be sitting down to a wonderful dinner. Take a deep breath, pour a glass of wine, and spend the next 1/2 hour just taking care of yourself.

Beef and Bean Sloppy Joes
This delicious and healthy version of the classic version is just as comforting and soothing as the recipe you've always used and it is ready in less than half an hour.

Ingredients
- 1 lb. lean ground beef
- 1 (15 oz) can black beans, rinsed and drained
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 t. chili powder
- 1 dash hot pepper sauce
- 1 (15oz) can tomato sauce
- 3 T. ketchup
- 1 T. Worcestershire sauce
- 2 t. spicy brown mustard
- 1 t. brown sugar
- 6 hamburger buns
Instructions
- Brown beef with onions and garlic in a large skillet over medium high heat for about 5 minutes, until beef is crumbly and onions are translucent.
- Add the beans , chile powder, and hot sauce, stirring to combine. Stir in the tomato sauce, ketchup, Worcestershire sauce, mustard and brown sugar.
- Bring to a simmer and let cook, stirring often, until the sauce has thickened, about 5 more minutes.
- Serve on hamburger buns.
