Couscous with Summer Squash, Mint and Pistachios #WholeGrainsWeek

Light and Lemony this couscous salad is full of zucchini, summer squash, mint and pistachios.  A perfect accompaniment to grilled chicken and served at room temperature accommodating those last cookouts of the year.

September is National Rice and National Whole Grains Month. The fourth week of September is National Wild Rice Week. Whole grains are nutritious and are great for making delicious food including appetizers, salads, breads, main courses and desserts.

The winter squash may be showing up at the Farmer's Market but that summer squash is still sitting on my counter calling to me to enjoy it before it is gone for another season.  

The fall season is just arriving in Michigan.  That means hoodies and jeans in the morning and evenings and shorts and tank tops during the day.  It is typical to wake up to the heater running, needing the air conditioning in the afternoon, being able to open windows and enjoy sitting outside in the early evening and then turning on the furnace before turning in for the night.

Our kitchens are filled with the last of the summer produce being canned and otherwise preserved while the Farmer's Markets are bringing out the fall harvest.  It is certainly a magical time and one of my favorite tmes of the year.

Couscous with Summer Squash, Mint and Pistachios

The bright lemony flavors of this side dish blend perfectly with chicken or fish.  I will be back on Friday with another Whole Grain Dessert Recipe.

Couscous Salad with Summer Squash, Mint and Pistachios

Light and Lemony this couscous salad is full of zucchini, summer squash, mint and pistachios. A perfect accompaniment to grilled chicken and served at room temperature accommodating those last cookouts of the year.

Ingredients

  • zest and juice of 1 lemon
  • 2 garlic cloves, smashed
  • 1 T. honey
  • 1/4 c. olive oil
  • 1 c. couscous
  • 1 1/2 c. chicken broth
  • 1 small zucchini, diced
  • 1 small summer squash, diced
  • 1 T. minced sweet onion
  • 1 T. olive oil
  • salt and pepper, to taste
  • 1/4 c. pistachios, shelled and coarsely chopped
  • 7-8 fresh mint leaves, chopped

Instructions

  1. Whisk together the lemon zest, juice, garlic cloves, honey and olive oil.  Set aside.
  2. Bring the chicken broth to a full rolling boil. Stir in the couscous. Cover, remove from heat and let sit for 10-20 minutes until all broth is absorbed.
  3. Heat about a Tablespoon of olive oil in a skillet.  Add the zucchini, squash and onions.  Season with salt and pepper and cook until onion is translucent and the squash firm.  Remove from heat to a serving bowl and let come to room temperature.
  4. Add the couscous to the vegetables.  Remove the garlic cloves from the dressing and drizzle desired amount onto the couscous mixture.  Add the mint and pistachios and toss to combine and coat with dressing.
