Shrimp Louis Sandwiches paired with an Alsace Pinot Blanc #FishFridayFoodies #Winophiles

Tender shrimp and fresh vegetables enfolded in a classic Louis dressing, served on a lettuce lined croissant and topped with avocado slices.  All the goodness of the salad in sandwich form, perfect for a picnic lunch paired with a Pinot Blanc from Alsace.  Life is very, very good.......

This is what picnic fare looks like when Fish Friday Foodies and the Winophiles get together.......
Unfortunately the weather in Michigan has not been too lovely for picnics this past week so we had to improvise and have our picnic inside.  But rest assured as soon as the weather permits we are going to have a "do over".

Sandwich and wine

My brother moved to California in the fall of 1974.  In the summer of 1976 I took my first airplane ride from Michigan to the west coast.  That trip was filled with firsts.  My first visit to LA.  My first visit to Disneyland.  My first view of an ocean. And my first Shrimp Louis Salad.

We stopped at a restaurant and I spied Shrimp Louis Salad on the menu.  I knew I liked shrimp and I was intrigued to try a new recipe.  It was a beautiful salad topped with several plump, tender shrimp and served with a dressing that reminded me of Thousand Island.

When Sneha asked us to share a fish or seafood recipe suitable for a picnic, my first thought was a Shrimp Louis Salad.  Then, as I was flipping through an issue of Cuisine at Home, I spied a recipe for a Shrimp Louis Sandwich.  Thinking that was even better picnic fare, I adapted the recipe that I am sharing with you today.

I also belong to a wonderful group called The French Winophiles.  This group gathers together each month to explore French wines.  This month we are exploring Alsace and Teuwen Communications was kind enough to source some of us samples of wines from the Alsace region of France.

I was fortunate enough to receive 3 bottles of wine for the purposes of tasting and pairing for this article.  I received no monetary compensation and all opinions and writings are my own.

I decided to open the Domaine Zind-Humbrecht Pinot Blanc to pair with the Shrimp Louis Sandwiches.  My first clue to the wine was in the shape of the bottles in which they came.  These are the classic shape of German wines.  Two of these wines also contained the classic German varietals of Gewurztraminer and Riesling.  

I knew, upon opening the box that Alsace must border Germany.  Further research taught me that Alsace borders both Germany and Switzerland.  In fact, it is so close that it is only a 15 minute tram ride from Alsace to Strasbourg.

The Humbrecht family has been making wines since 1620.  THAT is a long time.  In 1998 they were certified organic.  They grow vines in 10 different terroirs and the Pinot Blanc is grown on the Rotenberg vineyard in Wintzenheim and Herrenweg area in Turckheim.  It is fruity, crisp and dry.  

It was a pleasure from the very first sip and paired very nicely with the Shrimp Louis that had just the right amount of spice from the horseradish in the dressing.  

I am anxious to open the other 2 bottles of wine.  I am making Pork Satay and an Asian Noodle Salad for dinner this weekend and need to decide whether to go with the Riesling or Gewurtz  This is one of the topics that I'm going to ask the others about when we get together for twitter chat tomorrow morning at 11 AM ET.  We would love to have you join us.  You will find us following #winophiles.  Here are some of the other topics we will be discussing........

Shrimp Louis Sandwiches and Alsace Wine pin

In the meantime, there is nothing more romantic than loading a picnic basket with decadent food and a bottle of wine.  This sandwich makes a wonderful meal.  I would pack the shrimp separately so the croissants don't get soggy but once you reach your destination it only takes seconds to put the sandwiches together while your love opens the bottle of wine.  Cheers.......

Shrimp Louis Sandwiches

Shrimp Louis Sandwiches

Tender shrimp and fresh vegetables enfolded in a classic Louis dressing, served on a lettuce lined croissant and topped with avocado slices. All the goodness of the salad in sandwich form.

Ingredients

  • 1/2 c. Miracle Whip
  • 2 T. ketchup
  • 2 T. lemon juice
  • 1 scallion, minced
  • 2 t. prepared horseradish
  • 1 T. sweet relish
  • 2 dashes Worcestershire sauce
  • 1 lb. small cooked shrimp, peeled, deveined and chilled
  • 1 stalk celery, diced
  • 1/2 orange bell pepper, diced
  • sea salt to taste
  • 4 romaine lettuce leaves
  • 1 avocado, pitted and sliced
  • 4 large croissants

Instructions

  1. Whisk together the Miracle Whip, ketchup, lemon juice, scallions, horseradish, relish a Worcestershire sauce.  
  2. Fold in the shrimp, celery and bell pepper.  Season with sea salt.
  3. Cut the croissants in half horizontally.  Lay a lettuce leaf on the bottom half of each croissant.  Divide the shrimp salad between the sandwiches and top each with 2-3 slices of avocado.  Cover with top half of the croissants and serve.

  4. Those sandwiches look delicious and your upcoming pairings with the remaining Alsatian wines sound perfect! I'm with you on looking forward to being able to get back outside! We keep having to drive to the mountains to enjoy lunch outside, because the backyard is just way too hot!
