Asparagus and Ham Quiche

When I was a brand new bride.....over 40 yrs ago now.....I picked up one of those paperback cookbooks that are near the cash register at the grocers.  I think it was by campbell's soup company and it was called the mix and match cookbook or something like that.

It had a plethora of recipes that you could make, all including that household staple, canned soup.  I have been making my quiche following this recipe for all of those years.  I have, of course, made quiche without the soup but, honestly, it is not as tasty.

So the premise of this quiche is you take one can of cream soup, any flavor you wish.  Meat of choice, vegetable of choice, cheese of choice, 4 eggs, light cream and a pie crust and you can have any flavor quiche you want, knowing that it will turn out perfectly.

I have shared this recipe before, waaaay back when this blog first started.  So long ago, in fact, that the recipe maker I was using at the time is going to be obsolete soon.  This means that I am making and sharing many old recipes so that my readers are still able to access them.  You're welcome.

Asparagus and Ham Quiche

Asparagus and Ham Quiche

Diced ham, swiss cheese, fresh steamed asparagus, eggs, cream and a secret ingrdient that you probably have in your cupboard to make the easiest and most delicious quiche ever.

Ingredients

  • 4 eggs
  • 1 can cream of celery soup
  • 1/2 c. light cream
  • 1 c. shredded swiss cheese
  • 1/2 c. diced ham
  • 8 stalks asparagus, trimmed, cut into thirds and steamed
  • 1 pie crust

Instructions

  1. In large bowl of stand mixer fitted with the paddle attachment beat together the eggs, soup and cream until well combined.
  2. Place the pie crust into a pie pan and layer the cheese, meat and vegetable over the crust.  Pour the soup mixture over all.  
  3. Bake in a preheated 350* oven for about an hour until center is set.  Let rest for about 10 minutes before slicing and serving.

  2. I've never tried a quiche with a creamy soup - I can see that infusing extra flavor and moisture; I'm going to try that version soon!

  3. What a blast from the past for SRC! That brings back memories. I think using soup for recipes is a great idea. Saves on the amount of cream. I'll have to keep this in mind as I occasionally have cans in the pantry.

  4. I would never have thought of using canned soup, I'll have to try this,it sounds delicious. I usually keep a couple cans of Cream of Mushroom soup around for another recipe I make.
