Sweet Potato Salad #HolidaySides

This wonderful salad of roasted sweet potatoes, red onion and feta cheese is the perfect side dish for your Thanksgiving turkey this year.

This easy salad starts by roasting diced sweet potato with red onion.  It can be served warm or at room temperature, making it the perfect holiday side dish.  You can adjust the ingredients to serve 4, as written, to 12 or more.

My husband, who is not a sweet potato lover, ate 2 servings of this salad when I served it.  Sweet potatoes are the perfect side dish for Thanksgiving, in my opinion, and this salad can be served alongside your traditional mashed potatoes.

Sweet Potato Salad

Sweet Potato Salad

This wonderful salad of roasted sweet potatoes, red onion and feta cheese is the perfect side dish for your Thanksgiving turkey this year.

Ingredients

  • 1 large sweet potato, peeled and cubed
  • 1/4 of a small red onion, thinly sliced
  • 2 t. olive oil
  • salt and pepper, to taste
  • 3 T. dried cranberries
  • 3 T. crumbled Feta cheese
  • 2 t. apple cider vinegar
  • 1 t. dijon mustard
  • 1 t. honey
  • dash of ground cumin
  • dash of paprika
  • 4 t. olive oil

Instructions

  1. Toss the sweet potato cubes and red onion slices with the 2 teaspoons of olive oil.  Season with salt and pepper.  Spread onto a baking sheet and place in a preheated 400* oven for 20 minutes, until  fork tender.
  2. Whisk together the vinegar, mustard, honey, 4 teaspoons olive oil, cumin and paprika.  Taste and season with salt and pepper, as needed.  Set aside.
  3. Toss the hot sweet potatoes and onions with the dressing, cranberries and feta.  Place into a serving bowl.  Serve immediately or set aside and serve at room temperature when dinner is ready.
