Sweet Potato Salad
This wonderful salad of roasted sweet potatoes, red onion and feta cheese is the perfect side dish for your Thanksgiving turkey this year.

Ingredients
- 1 large sweet potato, peeled and cubed
- 1/4 of a small red onion, thinly sliced
- 2 t. olive oil
- salt and pepper, to taste
- 3 T. dried cranberries
- 3 T. crumbled Feta cheese
- 2 t. apple cider vinegar
- 1 t. dijon mustard
- 1 t. honey
- dash of ground cumin
- dash of paprika
- 4 t. olive oil
Instructions
- Toss the sweet potato cubes and red onion slices with the 2 teaspoons of olive oil. Season with salt and pepper. Spread onto a baking sheet and place in a preheated 400* oven for 20 minutes, until fork tender.
- Whisk together the vinegar, mustard, honey, 4 teaspoons olive oil, cumin and paprika. Taste and season with salt and pepper, as needed. Set aside.
- Toss the hot sweet potatoes and onions with the dressing, cranberries and feta. Place into a serving bowl. Serve immediately or set aside and serve at room temperature when dinner is ready.
