Caramel Apple Ice Cream Pie #FallFlavors

Caramel Apple Ice Cream Pie

Don't let the photo scare you.  I made this pie for a gathering on an extremely hot day.  By the time I got the pie cut and served, my piece had started melting and I had failed to get a photo of the first slice of pie.

That's what happens when a blogger like me actually makes food for family and friends to eat and enjoy instead of just for blogging purposes.

ingredients for Caramel Apple Ice Cream Pie

I was excited to use several sponsor gifts for this recipe.  The crust was made with Nairn's Oat Grahams.  I used the stem ginger flavor.  I also added some vanilla paste to the crust that was provided by Taylor&Colledge.  The Caramel drizzle was provided by Torani.

This recipe is made to go into a regular 9" pie plate.  My regular pie plates were in use so I used a deep dish pan.  Taste is the same, just not as pretty.

After you chill the crust, spread half of the ice cream over. Drizzle generously with the caramel sauce.

Add a layer of apple pie filling, another layer of ice cream and finish off with the caramel.  Pop it into the freezer for a few hours and serve.  Word to the wise. When I make this again, I will save the final caramel drizzle until right before serving.  The ice cream was too soft and the caramel melted right into it.  It was delicious but would be much more attractive with the caramel drizzle on top.

Caramel Apple Ice Cream Pie

Caramel Apple Ice Cream Pie

Ginger Graham Cracker crust filled with ice cream and apples. This no bake pie is the perfect end of summer leading into fall treat.
Prep time: 20 Mininactive time: 4 HourTotal time: 4 H & 20 M

Ingredients:

  • 1 box Nairn's Oat Grahams (I used Ginger Stem flavor)
  • 1/2 t. vanilla paste ( I used Taylor & Colledge)
  • 1/2 c. butter, melted
  • 1 (21 oz.) apple pie filling
  • 2 c. ice cream, softened
  • 1 c. caramel sauce (I used Torani)

Instructions:

  1. Place the oat grahams into a food processor and pulse until fine crumbs remain.  Pour into a 9" pie plate.  Add the melted butter and vanilla, stir to combine and then press onto the bottom and up sides of the pan.  Chill for 10 minutes, until hardened.
  2. Place 1 cup of the ice cream on the bottom of the crust.  Drizzle with 1/2 cup of caramel sauce.  
  3. Add a layer of Apple Pie Filling over the ice cream.  Spread the remaining cup of ice cream over the pie filling.  Cover and freeze for at least 4 hrs or overnight.
  4. Remove from freezer 15 minutes before serving .  Drizzle with remaining 1/2 cup of caramel sauce.
