We had fun celebrating our Angel Face's 6th Birthday yesterday. Even the dogs got into the spirit!!
Today I am going to share with you this fun recipe for Zombie Eyes. These will make a wonderful Halloween dinner served up with the Mashed Potato Ghosts in Swamp Water or as an addition to your favorite spaghetti recipe.
I used my recipe for Parmesan Mashed Potatoes for the ghosts and then used a pastry bag to make the ghost shapes onto a baking sheet. Twenty minutes before I wanted to serve dinner, I put the baking sheet into the oven and rewarmed the ghosts while I made the Swamp Water. You can find my Beef Gravy included in this recipe for pot pie.
These Zombie Eyes are easy to make and can be put together and browned ahead of time. They only take 10 minutes to finish up in the oven when you are ready to serve. I used my Marinara Sauce to help attach the eyeballs but you could just use tomato sauce if you aren't serving spaghetti.
This is a fun dinner for your little ghosts and goblins to help you make. I always find that kids love to eat the food they have helped prepare. They can roll the meatballs and make the "eyes" while you are browning them. Then when the meatballs are done, they can help attach the "eyes". This might be a fun project for Halloween night during this pandemic that will prevent them from going begging this year.
Zombie Eyes (Halloween Meatballs)
Ingredients
- 1 lb. ground beef
- 1/3 c. panko bread crumbs
- 1/2 c. shredded parmesan cheese
- salt and pepper, to taste
- 2 t. Italian herb seasoning
- 1 egg
- 1 T. olive oil
- 1 small can sliced black olives
- 1 stick string cheese
- Tomato or Marinara Sauce
Instructions
- Place the ground beef, bread crumbs, cheese, salt, pepper, Italian herbs and egg in a large bowl. Using clean hands, mix together until very well combined.
- Using a cookie scoop, form into 24 meatballs.
- Heat the olive oil in a large skillet over med high heat. Brown the meatballs on all sides, in batches if necessary. This should only take a minute or two per side. Transfer onto a baking sheet that has been covered with parchment or a silicone mat.
- Bake in a preheated 400* oven for 5-6 minutes, until cooked through.
- While meatballs are baking. Place 24 olive slices onto a plate. Cut 5 1/4" slices from the cheese stick. Cut each slice into quarters and place a quarter in each hole of the olives.
- Remove meatballs from oven to a serving platter. Place a small dollop of tomato sauce on each meatball and top with the olive "eye". Serve immediately.
