I love going to Farmer's Markets during the summer. I also belong to a CSA that I love. So when the Festive Foodies announced they were celebrating Farmer's Market Week I was very excited.
The first recipe that I'm sharing this week is this flavorful and gorgeous Peach and Strawberry Salad. I added some fresh mint from my garden. It is quick to throw together and the perfect accompaniment for whatever you are serving up.
Yield: 8 Servings
Peach and Strawberry Salad
This beautiful, colorful salad is a great addition to your socially distanced summer gatherings and al fresco dining.
Prep time: 10 MCook time: Total time: 10 M
Ingredients:
- 1 qt. strawberries
- 4 peaches
- chopped mint (5-6 leaves)
- juice of 1 lime
- 1 T. Pomegranate Molasses
- 1 t. balsamic Vinegar
- 1 T. honey
- salt and pepper, to taste
Instructions:
- Hull the strawberries and halve or quarter depending on size. Pit the peaches and cut into bite size pieces. Place in a large bowl along with the chopped mint .
- Whisk together the lime juice, molasses, vinegar, salt and pepper and honey. Pour over the fruit and mint, toss to coat and serve.

DeleteThose peaches look totally luscious. While we have huge fresh strawberries all spring and summer with strawberry stands on every corner, finding good peaches requires some hunting. I do have some pomegranate molasses so I need to make this!
