It's time for this month's Improv Cooking Challenge.......
Nichole of Cookaholic Wife invites us to join her each month in a cooking challenge. She provides two ingredients and we are charged with creating the best recipe we can featuring these ingredients. This month the items that we had to use were Watermelon and Olive Oil.
I bought a small, seedless watermelon in anticipation of this event, not yet sure what I wanted to make. When I got home and went to put the Watermelon in the refrigerator I spied some blueberries leftover from the Blueberry Mojitos we served up in celebration of Summer Cocktails. My mint is growing like crazy so I gathered so out to the garden I went, knowing that I had the start of a wonderful Summer Salad.
As with any salad being dressed in olive oil, it is very important to use the best quality oil you can afford. This is not a sponsored post but Lucini is my go to olive oil to have on hand for salad dressings, drizzling or bread dipping.
We served this up at the Teen's 16th Birthday Celebration. It was perfect. Took only minutes to make, could be refrigerated until ready to serve, and was a huge hit on a very hot day.

Watermelon, Blueberry and Mint Salad
This delicious, refreshing salad is perfect at your next picnic or backyard gathering.
Prep time: 10 MCook time: Total time: 10 M
Ingredients:
- 3-4 c. diced watermelon
- 1 qt. blueberries, washed and stemmed
- 7-10 leaves mint, chopped + a few leaves for garnish
- salt and pepper to taste
- juice of 1 lime
- 2 T. extra virgin olive oil.
Instructions:
- Place the watermelon, blueberries and chopped mint into a large bowl. Season with salt and pepper, sprinkle with the lime juice and drizzle with the olive oil. Toss to coat. Garnish with the mint leaves.
