This pandemic might have slowed for a while but now it seems to be rearing it's ugly head again. I did let down my guard a bit as far as having family and friends over to the house but I have still been limiting shopping trips and masking up when I do have to go to the store.
So when the ladies of From Our Dinner Table Group announced the theme, I was happy to make a dish without a trip to the store.

We had this as a side dish with Grilled Burgers one night and then the Angel Face and I finished up the rest for lunch the following day.
Yield: 8 side dish or 4 main dish
Macaroni Tuna Salad
Perfect as a light meal or a side dish this Macaroni Tuna Salad is perfect for summertime and easily made from items you probably have on hand.
Ingredients:
- 1/2lb small pasta, cooked per package directions
- 1 packet or 1 can of water packed tuna, drained
- 2 hardboiled eggs, diced
- 1 stalk celery, sliced
- 1/2 small onion, diced
- 2 T. dill relish
- 1/2-3/4 c. Miracle Whip
- salt and pepper, to taste
- paprika for garnish if desired
Instructions:
- In large bowl combine the tuna, egg, celery, onion, relish, salt and pepper with 1/2 cup of the Miracle Whip. Add the pasta and mix to combine adding addition Miracle Whip if needed.
- Sprinkle with paprika, if desired. Refrigerate until ready to serve.

Property of A Day in the Life on the Farm
This is almost the same way I made this dish for my kids when they were growing up, minus the celery, and with mayo instead of miracle whip. They LOVED it and requested it two or three times a month.

DeleteI made a tuna macaroni salad years ago and it was so good but I lost the recipe. I need to try this for this week when it's going to be so stinking hot!

DeleteThat's one of my favorite salads. We ate a lot of that in college because it was budget friendly and delicious.
