The recipe that I am sharing starts off with you frying up diced bacon until crisp. Set that aside. We will get back to it but for right now it is the drippings that you are after. Use those drippings to coat your waffle iron and then lay your thawed tater tots over the iron. Seal and cook.
When those potatoes are all nice and crispy, you have the basis for any kind of brinner you want to create. I added the works to mine. Cheese, Sour Cream, Bacon.....soooooo good.
Frank and the Teen went with the cheese and bacon but added eggs to theirs. Also very delicious. I think next time I make these I am going to make up some sausage gravy to pour over the top. My stomach just grumbled very loudly at that thought.
However you decide to top them, these crispy crunchy tater tot waffles make a perfect breakfast, brunch or brinner. Enjoy.
Tater Tot Waffles
Yield: 4 servings

Crisp, crunchy tater tots cooked up in the waffle iron and then topped with cheese, sour cream and bacon is a perfect casual and comforting dinner during these hard times.
Ingredients:
- 4-5 slices thick cut bacon, diced
- 1 (32 oz) bag tater tots, brought to room temperature
- salt and pepper, to taste
- 1 c. shredded Colby Jack Cheese
- Sour Cream for serving, if desired
- Eggs for serving, if desired
Instructions:
How to cook Tater Tot Waffles
- Cook the bacon in a skillet over med high heat until crispy. Transfer to a paper towel lined plate and set aside.
- Use the drippings from the bacon to liberally coat your waffle iron. Arrange Tater Tots in a single layer on the waffle iron. Season with salt and pepper and close the lid. Cook for 8-10 minutes, until crisp and golden brown.
- Remove to a plate and immediate sprinkle with 1/4 c. cheese. Place into a warm oven while repeating this process 3 more times.
- When ready to serve top with sour cream and bacon or, if desired, eggs and bacon.

Oh my goodness! What a very cool twist on Tater Tots, my all time favorite comfort food. And using bacon drippings to coat the waffle iron is genius.
