Cake for Breakfast...Why not?

Who says you can't have cake for breakfast?  These delicious waffles are made with a boxed cake mix and then topped with fresh strawberries and homemade whipped cream for a delicious start to your day.

When this quarantine first started, the Teen had a friend over and she decided that shoe wanted to stay here during the Stay Home/ Stay Safe period.  We were happy to have her and they kept each other company for over a week.

One day they decided they were going to make cake pops.  They made up the batter, made two batches and got bored with it.  The batter went into the refrigerator.  They said they were going to finish them the next day.  Two days later the batter was still in the refrigerator.  On the third day I decided to make waffles for breakfast.  I opened the fridge, saw the batter and thought "why not"?

So I put the batter into the waffle maker, cut up some fresh strawberries, whipped some cream and breakfast was served.

They were a success.  We all enjoyed them.  A few days later the numbers here in Michigan tripled for the amount of cases diagnosed.  The Teen's friend decided that she wanted to be with her family.  We completely understood.  We enjoyed having her and look forward to seeing her when this is all over.

Strawberry Cake Waffles

Who says you can't have cake for breakfast? These delicious waffles are made with a boxed cake mix and then topped with fresh strawberries and homemade whipped cream for a delicious start to your day.

Ingredients:

  • 1 box Strawberry cake mix prepared using directions on back of box
  • 1 pint fresh strawberries, cleaned, hulled and sliced
  • 1 c. heavy cream
  • 1 T. powdered sugar

Instructions:

How to cook Strawberry Cake Waffles

  1. In the large bowl of a stand mixer, fitted with the whisk attachment, beat the cream and sugar until light and fluffy.  Set aside.
  2. Heat a waffle iron and treat with cooking spray.  Add about 1/3 c. of the cake mix, close and cook per manufacturer's directions.
  3. When done remove from waffle iron to a plate, top with fresh strawberries and whipped cream.
