I did not use any sponsor products in this recipe however I did want to share it during this week.  In my humble opinion using a slow cooker is the absolute best method of making any stew.  It always turns out flavorful and delicious with meat that is so tender it nearly melts in your mouth.

Crock Pot Pork Stew

Crock Pot Pork Stew

Tender chunks of pork in a savory gravy with potatoes, carrots and peas cooks away all day long while you are at work or out running errands.

ingredients:

  • 1 (3 lb) pork shoulder roast, bone removed, trimmed of fat, cut into bite size chunks
  • 1 T. olive oil
  • 3 lg. carrots, scraped and cut into bite size chunks
  • 1 red onion, peeled and diced
  • 5 small russet potatoes, peeled and cut into bite size chunks
  • 2 (14 oz) cans chicken broth
  • 1 t. dried Italian Seasoning
  • salt and pepper, to taste
  • 1  (10 oz) pkg. frozen peas
  • 3 T. butter, room temperature
  • 3 T. flour

instructions:

How to cook Crock Pot Pork Stew

  1. Heat the olive oil in a large skillet over med high heat.  Add the cubed pork and season with salt and pepper.  Cook until seared on the bottom, about 5 minutes, flip and sear the other side for 3 or 4 minutes.  Remove with a slotted spoon to the crock of a slow cooker leaving any fat drippings behind.
  2. Add the onion, carrot and potatoes to the pork.  Season with Italian seasoning, salt and pepper.  Pour the chicken broth over all. Cover and cook on low for 6-7 hrs.
  3. Stir the peas into the stew.  Combine the flour and butter.  Stir into the stew until melted.  Turn heat to high and cook for another 30-40 minutes until  gravy is thickened.
