Baked Ham and Cheese Omelet #FantasticalFoodFight

When serving up omelets for more than one person, a great way to save time and all be able to eat together is to bake your chosen ingredients in a pie pan and then serve it up in hot slices all at the same time.


We are sharing Omelet recipes today in our Fantastical Food Fight......




Each month we get together with Sarah of Fantastical Sharing of Recipes for a Fantastical Food Fight.  Sarah gives us a theme or ingredient and sends us on our way to share the best recipe we can.  

This month's theme was omelets.  I decided to use up some of my holiday leftovers for this baked version, however you can use any of your favorite omelet ingredients.  


This is a very versatile recipe.   I made it using 6 eggs and baked it up in a pie plate to feed 3 of us.  However, you can make it to feed as many as you want.  Just adjust the vessel you use for baking.  I have made it for a crowd using 2 eggs per person plus fillings and baking it up in a 9x13" pan.

ingredients:

  • 6 eggs
  • 3/4 c. milk
  • 3 oz. diced ham
  • 1/4 c. shredded cheddar cheese
  • 1/2 c. shredded colby jack cheese
  • salt and pepper, to taste
  • cooking spray

instructions:

How to cook Baked Ham and Cheese Omelet

  1. Whisk together the eggs, milk, salt and pepper.  Fold in the ham and cheese.  Pour into a pie pan that has been treated with baking spray.
  2. Bake in a preheated 350* oven for about 40 minutes, until a knife inserted in the center removes cleanly but before any browning occurs.

  2. Beautiful selection of omelets!

    Just made an omelet for dinner tonight -- folded in 2 days of leftover vegetables including roast cauliflower, carrots, peas, mushrooms, onions, and garlic! My original idea was to bake it (then I would call it a frittata) but I cooked in in the largest frying pan because I didn't want to over cook the vegetables.
