Pear and Sweet Potato Soup #SoupSaturdaySwappers

This soup is not only gorgeous it is delightfully elegant and so very delicious.  A perfect start to your holiday meal.

Cam of Culinary Adventures with Camilla invited us all to join her in preparing a soup to help us celebrate the Holidays.  I decided to share with you the soup that I served for Thanksgiving.

Each month a group of us get together and make a soup or stew based on a theme chosen by one of the members.  Then we post about it on the 3rd Saturday of each month and link to each other's recipes and show each other some love.  We always welcome new members.  If you are a blogger who would like to join us, just leave a comment below with a link to your blog and I will be happy to add you to our facebook group.  In January we are making Main Course Soups and Stews.

This soup is a perfect first course for a Holiday Dinner.  It is full of seasonal flavors and it takes very little hands on time.  It comes together very quickly but can be made ahead of time and just be reheated when you are ready to serve.  


Saute together all your ingredients for a few minutes before adding chicken stock and simmering until the vegetables and pear are tender.  Then puree the mixture using a heavy duty blender or immersion blender.

At this point the soup is ready to serve or can be set aside and refrigerated until you are ready to serve.  


Thinly slicing a pear and sauteing it in butter makes for an elegant and beautiful garnish.  


I always enjoy serving a soup course when entertaining over the holidays.  I know this recipe is going to be making a repeat performance.

Pear and Sweet Potato Soup

This soup is not only gorgeous it is delightfully elegant and so very delicious. A perfect start to your holiday meal.

ingredients:

  • 2 T. butter
  • 1 sweet onion, chopped
  • 1 clove garlic, minced
  • 4 pears, cored, peeled and diced
  • 1 sweet potato, peeled and diced
  • 1 russet potato, peeled and diced
  • salt and pepper, to taste
  • 1/4 t. dried thyme
  • 5 c. chicken stock
  • 1 pear, thinly sliced (I used a mandoline), seeds removed
  • 1 T. butter
  • sour cream, if desired

How to cook Pear and Sweet Potato Soup

  1. Melt the butter in a soup pot over med high heat.  Add the onion and garlic.  Cook and stir for about 5 minutes.  Add the pear and both potatoes, season with thyme, salt and pepper.  Cook, stirring,  for 3 or 4 minutes.
  2. Add the chicken stock and bring to a boil.  Reduce heat to a simmer, cover and cook for 30-40 minutes, until pear and potatoes are very tender.  Using an immersion blender or heavy duty blender, puree the soup and return to the pot, keeping warm over low heat.
  3. While soup is simmering, melt the 1 Tablespoon of butter in a large skillet over med high heat.  Add the pear slices and cook about 3-4 minutes per side until golden brown.  Drain on a plate that has been covered with paper towel and set aside.
  4. Divide the soup into eight shallow bowls and top  each with a pear slice and a small dollop of sour cream, if desired.
