Chocolate Marshmallow Fudge with Walnuts #ImprovCookingChallenge

Nichole, who blogs over at Cookaholic Wife, challenges us each month to create the best recipe we can that includes the two ingredients she has chosen.  This month we were set loose with Marshmallows and Walnuts.

December is crazy busy so only a few of us joined in this month, let's take a look at what the other two are sharing:

December Improv Cooking Challenge


My Mom was a nut nut.  She loved nuts in everything.  And she loved her sweets.  I think my Mom thought that if you only nibbled on a full tray of sweets throughout the day, instead of sitting down and eating a serving, that the calories didn't count LOL.

Every Christmas season my Mom would make fudge that was loaded with nuts.  This is the fudge she would make, found on the back of Marshmallow Fluff.  When I bought the Marshmallow Fluff for this event, the recipe didn't seem the same, I looked up my Mom's and sure enough they changed it.


So the recipe I'm sharing is the one my Mom used.  I see absolutely no reason to change perfection.


I haven't made this fudge in years and it brought back so many sweet tender memories for me.  Tomorrow is Mom's Birthday.  She is spending it in Heaven with my Pops, brother, nephew, Grandma, Mother in Law, and all the other family members and friends who have passed from this life to eternity.  I was happy to have been given this challenge that allowed me to honor her memory.

Chocolate Marshmallow Fudge with Walnuts

Creamy, decadent fudge that takes only minutes to make and tastes better than any you can buy. Pick up some little Christmas plates and you have a perfect gift for coworkers, teachers, and party hosts.

ingredients:

  • 3 c. sugar
  • 1 1/2 sticks butter
  • 2/3 c. evaporated milk
  • 2 c. chocolate chips
  • 1 (7 oz) container Marshmallow Fluff
  • 1 c. chopped walnuts
  • 1 t. vanilla

instructions:

How to cook Chocolate Marshmallow Fudge with Walnuts

  1. Combine the sugar, butter and evaporated milk in a large sauce pan over med heat.  Bring to a full boil.  Cook and stir for 5 minutes. 
  2. Remove from heat and stir in the chocolate chips until melted.
  3. Add the marshmallow fluff and vanilla and beat with a hand mixer on low until combined.  Stir in the walnuts.
  4. Spread into a 9x13" baking pan that has been treated with baking spray.  Let cool and harden before cutting into 1" squares.
