Turkey Shepherd's Pie; Starting with Leftovers

Layer upon layer of Thanksgiving flavors.  Bottom layer is stuffing, topped by turkey and vegetables drenched in gravy and topped with mashed potatoes.


 A perfect way to serve up those Holiday Leftovers.......
Wondering what to do with those shelves full of food in your refrigerator.  This meal is the perfect way to re-purpose all of them into one delicious casserole.


Start off by taking that leftover stuffing and placing it in the bottom of a baking pan.



If you have enough gravy leftover then warm it up.  I didn't so I made some and included that step in the directions.  Once the gravy is made or rewarmed, chop up any leftover veggies and stir them in.  I had brussels sprouts, tri-colored carrots and corn.


Chop up some leftover turkey, about 2 cups worth and stir it into the gravy.  Spread this mixture over the stuffing layer.


The final layer are those leftover mashed potatoes.  Spread them over the top of the casserole and place into a preheated oven until heated through and bubbling.

Turkey Shepherd's Pie

ingredients:

  • 1 -2 c. leftover stuffing
  • 1/2 small onion, diced
  • 4 T. butter
  • 1/4 c. flour
  • salt and pepper, to taste
  • 2 c. turkey stock
  • 1-2 c. leftover vegetables, cut into bite size pieces
  • 2 c. turkey, cut into bite size pieces
  • 1-2 c. leftover mashed potatoes

How to cook Turkey Shepherd's Pie

  1. In a skillet over med high heat, melt the butter.  Add the onions and cook for a few minutes until fragrant and translucent.  Stir in the flour, salt and pepper and continue cooking for a minute or two.  Gradually whisk in the turkey broth and cook until thickened and bubbly.  Fold in the vegetables and turkey.
  2. Place the stuffing into the bottom of a 9x13" baking dish.  Pour the gravy, vegetables and turkey over the top.  Place dollops of mashed potatoes over the turkey layer and press into place forming a top crust.
  3. Bake in a preheated 350* oven for 40-45 minutes, until bubbly hot and the potatoes are browning a bit.
