Kiwano is also called Horned Melon and you should be able to find it at your international marketplace. It reminds me of cucumber in taste and I believe it is a member of the cucumber family. The seeds, like cucumber seeds, are edible but some people prefer to remove them and only eat the peeled flesh.

Grilled Beef Salad with Kiwano Dressing
This easy main course salad contains Kiwano Slices as well as being topped with a dressing made using Kiwano Melon and Blood Oranges. It makes for a wonderful change from your everyday salad without any more work.
prep time: 20 Mcook time: 20 Mtotal time: 40 M
ingredients:
- 2 Kiwano Melons
- 1 lb. Beef Tenderloin Steaks
- 4 c. Mixed Salad Greens
- 1 cucumber, julienne cut
- juice of 1 blood orange
- 1 scallion, chopped
- 1 T. olive oil
- dash of cumin
- 1 clove garlic, smashed
- Salt and Pepper, to taste
instructions:
How to cook Grilled Beef Salad with Kiwano Dressing
- Season the steaks with salt and pepper and grill or broil to desired temperature. Remove from heat and set aside to rest.
- Cut one of the Kiwano melons in half, slice into half moons and remove the peel.
- Cut the other Kiwano in half and scoop the insides into a heavy duty blender along with the juice, olive oil, scallion, garlic, cumin, salt and pepper. Puree until smooth. Remove to a bowl and set aside.
- Divide the greens onto 4 plates. Sprinkle with the sliced melon and julienne cut cucumbers. Slice the beef tenderloin and divide between salads. Drizzle with some of the dressing and pass the rest for people to add as desired.
