Now your family can enjoy all the great tastes of pizza in these bite size muffins that are ready in less than half an hour.
One of the things I love about muffins is that they are so quick and easy to put together. You can make them savory or sweet. They can be eaten for breakfast, lunch, dinner and snacks. They are easily adaptable to whatever you have in your pantry and refrigerator.
When we were posting recipes for back to school treats, Ashley of Cheese Curd in Paradise shared this recipe for Pizza Muffins. I printed it out and set it aside. They sounded sooooo good.
Now that the Teen is back in school, it was the perfect time to bake these up for her and her friend's to enjoy when they walk in the door starving in the afternoon. It is always too long for them to wait for dinner time but I don't want them eating so much that they can't enjoy dinner. These mini muffins are perfect for taking the edge off and holding them over for a couple of hours.
I adapted this recipe from the one I shared from Ashley at Cheese Curd in Paradise. Ashley adapted hers from Rachael Ray. Enjoy......

Mini Pizza Muffins
These savory little mini muffins are great for in the kids lunchboxes or as an after school treat. They are also great as part of an appetizer buffet on game day. Who doesn't love pizza?!!
prep time: 5 Mcook time: 20 Mtotal time: 25 M
ingredients:
- 3/4 c. flour
- 3/4 t. baking powder
- 1 T. Italian seasoning
- pinch of salt
- 3/4 c. half and half
- 1 egg
- 1 c. shredded Mozzarella cheese
- 1/4 c. shredded Parmesan cheese
- 20 pepperoni, coarsely chopped
- pizza sauce for serving, if desired
instructions:
How to cook Mini Pizza Muffins
- Combine the flour, baking powder, Italian seasoning and salt in a large bowl. Make a well in the dry ingredients. Place the egg and light cream into the well and whisk to combine.
- Stir in the cheeses and pepperoni. Let rest in bowl while you preheat the oven to 375*.
- When oven is preheated, divide the batter between 24 mini muffin cups. Bake for 20 minutes. Serve with pizza or marinara sauce for dipping, if desired.
