Chocolate Caramel Apple Slices: Welcome to #AppleWeek

I used 3 different types of apples when making these caramel apples.  Granny Smith, Honey Crisp and, of course, Envy.   I need to be honest here.  I had originally planned to only use Envy apples but my husband, who is not a caramel fan, said "these apples are too good for you to ruin in caramel".  

I love caramel but he did have a point.  While I wouldn't say "ruin", I would say that the Envy apples are so good on their own that it seems a shame to cover their taste with anything else.  


The ginger grahams not only add a wonderful taste to the caramel apples but they also help keep the caramel from sticking to the silicone mat or parchment paper used to line a baking tray.  When I first received this box of cookies, I opened a packet and tried them.  Before I knew it the entire packet was gone.  They are so good.  I had to force myself to save them for a recipe.


One of the other problems with caramel apples is that they are too big!!   I find that after a couple of bites we have had enough and into the refrigerator it goes, most often forgotten and languishing there until I clean the refrigerator before grocery shopping.  I decided to make slices and halves as well as a whole caramel apple so that we didn't have that problem.  The knife provide by Zyliss worked perfectly for slicing and cutting those apples.


I really don't have a recipe to share for these caramel apples.  It is more of a method.  I received the Caramel Apple Kit from Chocoley.  It is amazing, 5 lbs of caramel, 5 lbs. of chocolate, sticks, bags, instructions.  Everything you need and they are giving away the same package to one of our lucky readers!!!

Chocolate Caramel Apples

Delicious apples coated in caramel, sprinkled with ginger cookie crumbs, drizzled with 2 different chocolates. It must be Fall!!!

ingredients:

  • Desired amount of Apples
  • 1 T. vinegar
  • Caramel from 5 lb. block Chocoley Caramel
  • Evaporated Milk
  • Gourmet Compound Milk Chocolate from Chocoley
  • Gourmet Compound White Chocolate from Chocoley
  • Wooden Skewers
  • 12 ginger cookies, I used Nairn's 

instructions:

How to cook Chocolate Caramel Apples

  1. Place the apples in a sink filled with water and vinegar and let soak for a few minutes before washing and drying completely.
  2. Decide how many apples you want and whether you want them whole, halved or in slices.  Cut to desired size, if necessary and place a wooden skewer in each apple or apple piece.
  3. Melt the caramel per package directions adding evaporated milk until it is the desired consistency.  
  4. Place the cookies into a food processor and pulse until crumbs.  Place into a shallow bowl.
  5. Dip the apples/apple pieces into the caramel, swirling to coat.  Allow excess to drip back into the bowl or pan.  Sprinkle the apple as desired with the cookie crumbs.  If you place the cookie crumbs on the bottom side of the apple and/or apple pieces it will prevent sticking.  Place onto a baking sheet that is covered with parchment or a silicone mat.
  6. Place the baking sheet in the refrigerator until caramel is set, about 15 minutes.
  7. Melt the milk chocolate per package directions.  Dip or drizzle the caramel apple with the chocolate.  Set aside to set.
  8. Melt the white chocolate according to package directions and drizzle over the apples/apple slices. 
  9. Keep chilled until ready to serve.
