Avocado Cupcakes with Lime Frosting #ImprovCookingChallenge #NationalCupcakeLoversDay

These amazing cupcakes get their tender crumb from the addition of avocado and their citrusy flavor from lime zest and juice.  Your family is going to love them and won't even realize you have sneaked veggies into their treat.


This amazing creation is what happens when National Cupcake Lover's Day collides with the Improv Cooking Challenge!



When Valentina of The Baking Fairy invited us to join her in celebrating National Cupcake Lover's Day, I knew that I was joining in the fun.  After all, who doesn't love individual little cakes?

Cupcakes are great all year long.  During the winter months you can send them to school with your kids or take them to work to share with your friends there and during the summer they are perfect picnic desserts.

With all of the wonderful recipes being shared today you can make a different cupcake each month of the year for the next three years!  Woohoooo.......

When I realized that our Improv Cooking Challenge fell on the same day and that our ingredients this month were avocado and limes, I knew that I could easily combine the two events into one amazing cupcake!!

Improv Cooking Challenge is led by Nichole of Cookaholic Wife.  A group of us meet up each month to create and share recipes that contain the same two ingredients.  It is a lot of fun to see what everyone comes up with.  Here are the recipes containing Avocado and Lime for this month's challenge.
As you can see most people went savory and that was my first thought as well until Valentina reminded us that it is National Cupcake Lover's Day.


    This recipe that I adapted from the California Avocado website incorporates avocado into the batter and both avocado and lime into the frosting.   I was so thrilled with the results of this recipe that I couldn't wait to share them with you.


    Being able to combine these two amazing events was like "Having my Cake and Eating it too".  Get it?  Cupcakes?  On, never mind.  

    Believe me when I say you definitely want to print off this recipe and put it on your to make list.  Then head over and drool over the rest of the cupcakes that can be served up as dessert after you make some Avocado and Lime creations for dinner.





    Avocado Cupcakes with Lime Frosting

    These amazing cupcakes get their tender crumb from the addition of avocado and their citrusy flavor from lime zest and juice. Your family is going to love them and won't even realize you have sneaked veggies into their treat.

    ingredients:

    For the cupcakes
    • 2 1/4 c. sifted cake flour
    • 1 t. baking soda
    • 1 t. baking powder
    • pinch of salt
    • 2 T. butter, room temperature
    • 1 avocado, peeled, pitted and pureed
    • 1 c. sugar
    • 1 t. vanilla
    • 2 eggs
    • 1 c. buttermilk
    For the Frosting
    • 3 c. powdered sugar
    • Flesh from 1/2 an avocado, pureed
    • 2 T. butter, softened
    • 2 T. cream cheese, softened
    • zest of 1 lime
    • juice of 1/2 lime
    • 1 T. milk
    • 1 t. vanilla
    • sprinkles, if desired

    How to cook Avocado Cupcakes with Lime Frosting

    For the cupcakes
    1. Combine the flour, baking soda, baking powder and salt in a bowl.  Set aside.
    2. Place the butter and avocado in the large bowl of a stand mixer fitted with the paddle attachment.  Add the sugar and beat until well combined.
    3. Add the vanilla and then the eggs, one at a time, beating well after each.
    4. Turn the mixer to low speed and add the buttermilk until just combined.  Gradually add the flour mixture until incorporated, then increase speed to medium and beat for half a minute.
    5. Divide the batter between a 12 cup muffin pan that has been treated with baking spray.
    6. Bake in a preheated 325* oven for 20 minutes, until a skewer inserted removes cleanly.  Cool cupcakes in the pan on a wire rack for 10 minutes before removing from pan to the wire rack to cool completely.
    For the frosting
    1. Place the butter, avocado ,cream cheese, and lime zest in the small bowl of a stand mixer, fitted with the whisk attachment.  Whisk on medium speed for 3 minutes, scraping the bowl several times.  This will ensure a creamy frosting.
    2. Turn the mixer speed to low and gradually add the powdered sugar until completely incorporated.  Add the lime juice and mix well.  
    3. Add the milk, a drop or two at a time until the frosting reaches your desired consistency.  Stir in the vanilla.
    4. Spread frosting onto cooled cupcakes and decorate with sprinkles if desired.
