Hawaiian Chicken in Foil #OurFamilyTable

Dinner doesn't get much easier than chicken breast slathered with Hawaiian flavors and grilled up in a packet with pineapple and red peppers.

I love making foil packets for on the grill.  No muss, no fuss.  No dirty pans to clean.  Chicken stays moist and tender.  Add a side salad and dinner is served.


For this recipe, you first rub the chicken with blend of spices and then add a homemade BBQ sauce before sealing it up and putting it on the grill for 15-20 minutes.


That's all there is to it....Easy, Peasy and Delicious.  The perfect meal to allow you to enjoy your family time with the family instead of in the kitchen.

ingredients:

For the Rub
  • 1 t. brown sugar
  • 1 t. chili powder
  • pinch of salt
  • pinch of pepper
  • pinch of garlic powder
  • dash of cayenne pepper
For the BBQ Sauce
  • 1/2 c. ketchup
  • 2 T. brown sugar
  • 1 T. vinegar
  • 1 T. mustard
  • 1/2 t. Worcestershire Sauce
For the Foil Packets
  • 4 boneless, skinless chicken breast halves
  • 1 pineapple, cored, peeled and chunked
  • 1 red bell pepper, cored and chunked
  • 4 scallions, white and light green parts, thinly sliced

How to cook Hawaiian Chicken in Foil

For the Rub
  1. Combine the brown sugar, chili powder, salt, pepper, garlic and cayenne in a small bowl.  Set aside.
For the BBQ sauce
  1. Whisk together the ketchup, brown sugar, vinegar, mustard and Worcestershire sauce in a small bowl.  Set aside.
For the Foil Packets
  1. Wash and pat dry the chicken breasts.  
  2. Place 4 pieces of heavy duty aluminum foil about 24" long onto the counter and spray with cooking spray.
  3. Toss together the pineapple, pepper and scallions. Divide between the 4 sheets of foil.
  4. Rub the chicken breasts with the spice mixture on both sides.  Place on top of the pineapple mixture.
  5. Ladle 1/4 of the sauce over each chicken breast and fold the foil over the top of the bundle, crimping closed the sides.
  6. Place in a preheated grill over med high heat with the lid closed for 15-20 minutes, until the chicken reaches 165*.
