Adjaruli Khachapuri #BreadBakers

This amazing bread is filled with two different kinds of cheese and then topped with a delicious runny egg.

When I visited Caroline's Cooking and saw this amazing Georgian Cheese Bread I immediately printed out the recipe.  I knew that I wanted to make this and that my family would love it.

When Pavani of Cook's Hideout, who is hosting Bread Bakers this month, announced the theme of "Catch Up Recipes".  I knew I had found my opportunity.  This recipe covers a multitude of themes we have had for Bread Bakers in the past years.

I was a little disappointed in myself for losing track of time and letting my bread bake a little bit longer than I should have.  I wasn't even going to post it but then I tasted it.  It was like a little bit of heaven.  Frank, the teen and I dug in and it was gone in the blink of an eye.  

This is going to be made again and I was hoping to get it made again before I posted today but, alas, life gets in the way.  


I made this as one large loaf that we all shared but the next time I make it I am going to make 4 individual loaves each with their own egg and it will be breakfast or brunch.  Before I share the recipe with you let's see what the others are sharing.......

Adjaruli Khachapuri

This amazing bread is filled with two different kinds of cheese and then topped with a delicious runny egg.

ingredients:

  • 1 1/2 c. bread flour
  • 3/4 t. instant yeast
  • 3/4 t. salt
  • 1/2 t. sugar
  • 1 T. olive oil
  • 2/3 c. warm water (105-110*)
  • 1/2 c. shredded mozzarella
  • 1/2 c. crumbled feta cheese
  • 1 egg

instructions:

  1. Place the flour, yeast, salt, sugar, olive oil and water into the bowl of a stand mixer fitted with the dough hook.  Turn on low and mix until combined and pulling away from the sides of the bowl.  Turn the speed to medium and allow to knead for about 5 minutes.
  2. Remove the dough ball from the bowl,  add a little olive oil to the bowl, return the dough ball and turn to coat in oil.  Cover with a warm, damp towel and set in a warm, draft free area to rise.  About 2 hrs.
  3. Punch down the dough and then stretch and roll it into a round.  Place onto a baking sheet that has been lined with parchment paper or covered with a silicone mat.  
  4. Combine the cheeses and sprinkle a little bit along the edge of the round.  Roll the dough over the cheese and then twist the ends of the circle together forming an  oval.  Place the rest of the cheese into the inside of the bread ring.
  5. Bake in a preheated 450* oven for about 20 minutes, until the bread is lightly browned.  Remove from oven, make an indentation in the cheese with the back of a spoon.  Place an egg into the depression and return to the oven until the egg is cooked to your liking, about 5 minutes.
  6. While still warm, tear pieces of bread from the ends and sides and dip into the egg and cheese mixture to eat.

  3. I love that a little cheese is hidden in the crust. I've a small bit of pizza dough in the freezer, I need to top it with cheese and an egg.
