Salisbury Steak with Mushroom Gravy #FoodieExtravaganza

Lean ground beef mixed with breadcrumbs and egg, formed into patties and fried a perfect golden brown before being smothered with a delicious mushroom and onion gravy.

This is the perfect dish to celebrate National Mushroom Month with the members of our Foodie Extravaganza group.......

I love mushrooms.  Here in Michigan we hunt for and, if lucky, enjoy Morel Mushrooms in the Spring.  In the Fall, my husband and I will often go on the hunt for what he calls, Polish Mushrooms.  He calls them this because that is what his family called them when they would go mushroom hunting each fall.  I don't really know what kind of mushrooms they are but I do know that they are good.

It is not quite Fall Mushroom hunting season here yet but it is National Mushroom Month so I asked my friends from FoodieExtravaganza to join my in a tribute to this Fun Guy.

See what I did there?

Fungi/Fun Guy?

Get it?

Whooooo, I crack myself up!!

Okay, I'm better now.

So, the possibilities with mushrooms are endless.  I must add them to my recipes 3 or 4 times a week.  With such an open topic, I am very anxious to see what the others decided to share.  Let's take a look........

I must be honest here.  I did not make this recipe.  I printed a recipe that I found on Allrecipes.com and handed it to my husband as I walked out the door to work the food pantry.

When I walked in the door, shortly after 5 pm, Frank was adding the mushrooms and onions to the pan.  He also had potatoes boiling for mashed potatoes and had cut some corn from the cob and was sauteeing it in butter.  My stomach started to grumble.

By 5:20 we were sitting down to dinner with plenty of time to eat before Marissa had to be taken to Cheer practice.  It was a delicious meal and I wish I could take all the credit for myself but Frank is pretty faithful about reading my blog and would call me on it in a hot second.

prep time: 15 minscook time: 20 minstotal time: 35 mins

ingredients:

1 lb. Ground Beef
1/3 c. panko bread crumbs
1/2 of a small onion, chopped
1 egg
salt and pepper, to taste
2 c. beef broth
1 medium Vidalia onion, sliced
6 oz. sliced mushrooms
3 T. cornstarch
3 T. water

instructions

Combine the ground beef, panko, chopped onions, egg, salt and pepper in a bowl until well blended.  Form into 4 patties, approximately 3/4" thick.

Fry the patties in a large pan over med high heat until browned on both sides, about 5 minutes per side.  Add the beef broth, onions and mushrooms to the pan. Bring to a boil.  Reduce heat to a simmer, cover and cook for about 10 minutes longer, until beef is cooked through and the onions and mushrooms are softened.

Remove the patties to a plate and set aside.  Bring the broth mixture back to a boil.  Whisk together the cornstarch and water.  Add to the boiling broth, stirring constantly, for a minute or two, until glossy and thickened.  Pour over the patties and serve.
