Welcome to Improv Cooking Challenge where our host Nichole of Cookaholic Wife, invites us to create a dish based on the theme or ingredient she chooses. This month she asked us to create a Red White and Blue dish in honor of our Nation's birthday.
Starting out with frozen puff pastry makes this gorgeous dessert easy peasy. Your guests will be very impressed and never have an inkling how simple it was to make.
Thaw your puff pastry according to the directions on the box. You can, of course, use homemade puffed pastry but I, personally don't see much of a difference in anything other than the time it takes.
Roll your pastry out a little thinner so that it makes a nice rectangle to fit onto your baking sheet. Fold over the edges and dock the inside by puncturing holes along the bottom with the tines of a fork.
Bake it up to a golden, crispy brown. Remove it from the oven to a cooling rack and let cool completely.
While it cools you can mix together some Neufchatel cheese with the zest and juice of half an orange. This is also the ideal time to wash and prep your Strawberries and Blueberries. Spread the cheese filling all over the inside of the tart shell and then decorate with the fruit as desired. I simply made rows with the strawberries and then sprinkled the blueberries over the entire thing.
This holds up very well in the refrigerator, covered for up to two days. Let's take a look at the other Red, White and Blue creations being shared today.

Red White and Blue Tart

This quick, simple and delicious tart is perfect for your Independence Day celebration.
ingredients:
1 sheet frozen puff pastry, thawed per package directions
1 egg
1 T. water
6 oz. Neufchatel Cheese
Juice and Zest of 1/2 orange
1 T. powdered sugar
12 -15 Strawberries, hulled and cut in half
half pint blueberries, washed and stems removed
1 T. strawberry jam or jam of choice
instructions:
Roll out the puff pastry into a rectangle so that creases are smoothed. Place onto a baking sheet that has been lined with a silicon mat or parchment paper. Fold approx. 1" of the sides over the edge making a border. Prick the inside of the puff pastry all over with a fork to prevent puffing. Whisk together the egg and water. Brush the egg wash over the border of the puff pastry. Bake in a preheated, 4008 oven for about 10 minutes, until golden brown. Remove to a wire rack and allow to cool completely.
In the small bowl of a stand mixer, beat together the Neufchatel cheese, orange zest, orange juice and powdered sugar until creamy.
Spread over inside of cooled tart shell. Top the cheese filling with the strawberries and blueberries in a decorative manner. Place the jam in a microwave safe bowl and microwave on high for 15-30 seconds until melted. Brush the strawberries and blueberries with the melted jam to glaze.
