Hawaiian Cole Slaw #CookoutWeek

Coleslaw chock full of pineapple, mandarins and macadamia nuts dressed with tangy, citrusy, creamy goodness.


I made this coleslaw last September for my granddaughter's Moana themed 3rd birthday party but have never shared it with you.  When I started choosing the recipes I wanted to make for Cookout Week this year, I came across this in my archives.Welcome to Day 5 of Cookout Week...…….

Using premade Coleslaw Mix makes allows this recipe to come together in a snap.  You could make it even faster by using prepared pineapple chunks but I love using fresh pineapple when possible.


I served this up with Pulled Pork and Coconut Chicken but it would be a great side dish for whatever you are putting on the grill.

Hawaaian Coleslaw

Coleslaw chock full of pineapple, mandarins and macadamia nuts dressed with tangy, citrusy, creamy goodness. This recipe is perfect for your next luau, backyard gathering or potluck.
prep time: 10 minscook time: total time: 10 mins

ingredients:

1 (14 oz) bag of coleslaw mix
1 pineapple, peeled, cored and cut into bite size chunks
1 (14 oz) can mandarin oranges, drained, juice reserved
2-3 oz.  Macadamia nuts
1 c. Miracle Whip
salt and pepper to taste

instructions

Place the coleslaw mix into a large bowl with the pineapple, mandarins and nuts.  

In a small bowl, whisk together the Miracle Whip with some of the reserved juice.  You may not need all the juice, depending on the consistency you like for your dressing.  If there is not enough juice to get the consistency you desire add a little milk to the mixture.  Taste and season with salt and pepper.

Pour the dressing over the coleslaw and toss to combine.

  4. This sounds so good! I love how you made it originally for a Moana birthday party!!! Brilliant! And it sounds like it would be amazing with the pulled pork and coconut chicken! I'm comin over to eat at your house! lol
