I don't know how Sarah manages to keep it all together..she is a wife, mom of 3 (including a newborn), owner of her own blog as well as the leader of Secret Recipe Club. I get tired and confused just writing it all down LOL.
Sarah chose tailgating as the theme for this special edition, gathered members from all 4 SRC groups and made the assignments. One of the great things about these special editions are we get to meet and learn about members of our club that are assigned to other groups. I was lucky enough to be assigned Michaela of An Affair from the Heart. Michaela caught my heart right away because when she was young and asked what she wanted to be when she grew up her response was "a mom". That was what I wanted to be when I grew up too! I thought I was the only child that dreamed of nothing more than being a mom. Michaela's dream came true, she is a SAHM of four who loves to cook and entertain. The cooking and entertaining endeared her to me even more. I was lucky enough to be a SAHM for the first half of my children's lives before starting my career as a police officer. I wouldn't change my experiences for anything but I do regret having missed out of parts of my children's daily lives while at work.
So, here I was, with a great theme, a great assignment and literally hundreds of great recipes from which to choose. The only thing I was short of was time because we weren't home too much during this past month. Knowing that I was going to be going out of town again and would be gone the week of this event I chose to make a dish to serve when my kids came over for dinner to celebrate my birthday. That knocked out the Jello Shots that I thought I would make in my Michigan State molds in honor of the tailgating theme. Not that my adult kids don't drink but then they would have to drive home and I don't need those worries.
I went into Michaela's section of appetizers and snacks and immediately hit pay dirt. See it is not just football season here in Michigan but it is also corn season, so when I saw this recipe for Award Winning Crack Dip I knew that it was exactly what I was going to make.
I adapted the recipe to work with what I had in the pantry and refrigerator. I have never heard of Mexicali corn so I am not sure what else is in the can with the corn. I just used the kernels of 4 ears of fresh sweet corn. I used Miracle Whip instead of Mayo and 1 large fresh jalapeno instead of the jarred called for in the recipe. I have to confess that when I was putting this together I had some serious doubts but Michaela related that she was surprised by this recipe as well so I persevered and......THIS STUFF IS LIKE CRACK!! I am addicted and advising you to heed my warning because you too will be a Corn Dip addict after just one bite.
Thanks Michaela for a great recipe and thanks Sarah for putting together this fun event.

This looks good, I'm putting it on my list of stuff to make soon. I'm sure there will some kind of gathering I need to attend in the next little while... Great SRC choice.
ReplyDeleteI've wondered about this dip when I've seen it other places. Glad to hear it's good - I'll have to try! I had our blog this month, and I made your Chicago Style pizza. It was fantastic!! Can we still be friends, even if I photographed it with one of my UofM football glasses?? ;)
ReplyDeleteSure I am a State fan if I have to choose but football is very low on my list of priorities LOL. Glad you enjoyed the pizza.
DeleteYou crack me up, Wendy! I like to keep busy - thankfully Little Man is starting to nap for longer periods, so I have a little "free time" :) Great choice for today's theme - I need to make this dip. It has been on my list for eons!
ReplyDeleteWe really do appreciate all you do Sarah.
DeleteThank you for the sweet words about my blog -- I have had the pleasure of cooking from yours in the past! :) Happy you guys liked the dip -- If you are looking for Mexicorn, you can find it in a can with the other corn, it has peppers in it! Maybe you can try it next time and see which you prefer? Thanks again!
ReplyDeleteI did see some that was called Fiesta corn. Probably the same thing with a different name. I enjoyed getting to know you a little bit Michaela and look forward to visiting your blog regularly.
DeleteWe love this dip! We have it quite often as a summer side.....so yummy!
ReplyDeleteIt was yummy.
Deletemmm...corn crack! Sounds fantastic - and think it would make a great topper for tacos :-)
ReplyDeleteThat is a good idea Amanda.
DeleteGreat dip idea and choice for reveal day! I bet this would be a hit at any tailgate.
ReplyDeleteI think so too Sue.
DeleteI have a dip quite similar to this on my blog, so I know it's delicious. And the perfect tailgating snack.
ReplyDeleteThanks Lauren.
DeleteThat looks like the perfect dip for tailgating! Plus you can't go wrong with fresh corn. Great SRC recipe!
ReplyDeleteYou are very right Heather.
DeleteYUM! We love Crack corn dip here. I have a funny story about jello shots. A friend made them and brought them to my wedding reception in our backyard. We left them in the house so they wouldn't melt. Later she went into retrieve them and the four or five little kids that had attended were a tiny bit tipsy!! OOPS. Should have put them somewhere the kiddos couldn't find them. No one was injured and we had a good laugh.
ReplyDeleteAnd those kids probably went to bed early and slept very well LOL.
DeleteYum! This looks so good. Perfect for a tailgate.
ReplyDeleteThanks Julie.
DeleteLove the idea of corn crack. I recently made elote and my husband was hooked. He would love this. Perfect for tailgating!
ReplyDeleteI will have to look up elote. Have never heard of it.
DeleteThat sounds amazing and I did pin it =) I'm also a closet Miracle Whip lover.
ReplyDeleteI think it depends on what you were raised with. I didn't even know there was another mayonnaise until I started shopping on my own LOL
DeleteI also don't know how she does it all, but we are lucky to have a moderator with so much enthusiasm for the SRC!
ReplyDeletegreat dip, by the way..... nice choice for your assignment!
Thanks Sally.
DeleteI can totally see how this could turn into an addiction, sounds awesome and get me some tortillas. Great SRC pick!
