Afterglow Reception


As promised, I am sharing my menu and some photos of the Afterglow Reception I hosted following our "Music for the Lenten Season" featuring David Troiano performing on the Historic Hook & Hasting Organ at our Parish.

I was very honored that they asked me to host this for them.  I love doing this sort of thing and even more so when it is for the glory of God.


The Menu

I have this whole menu to feed 200 ppl and I only have 1 recipe to share with you.  I took the easy way out for most of the menu but I like to make my own Salmon Mousse.  It only takes seconds and it is a LOT less expensive.




Salmon Mousse

1 (4 oz) package smoked salmon
2 or more T. half and half
Juice of 1/2 lemon
1 (8 oz) pkg. neufchatel cream cheese
1/2 t, dried dill
salt and pepper to taste

Throw everything into food processor and pulse until combined.  Add more cream a bit at a time until the mousse is the consistency you desire.  Taste and adjust seasonings.  Print Recipe

And here is our Afterglow Reception.....It turned out very nice.
