There IS no place like home!

We are home, safe and sound.  We had a wonderful time, the sun was shining and it was warm. When we landed today it was 6* but the sun was shining and the snow was glistening.  Jen and Randy met us at the airport to grab Lili and head back up north because she had an important basketball game tonight at 6 pm.  We walked to our car and it was brisk....and I was smiling....

On the way home we stopped for pizza and a beer.  We dropped off Ryan and his dog, Dragon, was very happy to see him.  But not quite as happy as my goofy dogs were to see us!!!  Holy cow, you would have thought that we had been gone a year.  There is nothing better for one's self esteem than a pet.  Their love is truly unconditional and unending.  Especially when you are standing at the "cookie" jar. LOL

After we were done loving on the dogs, I pulled out my computer to post this blog and it is DEAD.  The screen is completely shot, it is like the pixels are deteriorating.  Frank is working on saving all my files and I am on his laptop as I write this.  Tomorrow we will be going out to buy me a new one.

My sister bought me a surprise and gave it to me when we were dropping Ryan off.  I thought it was very apropros for today.  It reminds me to Thrive at Home, I will be linking up to share it on Thursday.



Today is Meatless Monday so we are having Macaroni and Cheese for dinner tonight.  Frank loves my Mac and Cheese so we have it quite often.



Macaroni and Cheese

1 14 oz. box of macaroni, cooked per directions on box
2 cups shredded Monterey Jack Cheese
1/2 c. half and half
2 T. butter cut into 8 pieces
salt and pepper
Paprika
Mix cooked Macaroni with Cheese, half and half and 
salt and pepper to taste in a buttered casserole.
Place butter pieces on top and sprinkle with paprika.  Bake at 350* for 30 min.
This creates a dry Mac and Cheese which is what my family prefers. 
You can add more cream for a creamier version.   Print Recipe

  1. I have to admit that mac and cheese looks wonderful. I am not a big fan so when I make it is is usually Kraft. Maybe I should try your recipe. Welcome Home! I hope your computer was backed up!

    1. Well I am not a big fan of Kraft Mac and Cheese either although my kids were and had it for lunch with tuna in it quite often while they were growing up. This is nothing at all like Kraft, let me know what you think if you decide to try it.
